When Using Fresh Strawberries
- Be sure they are in season for the best flavor of your sorbet. They should be naturally sweet and bright red.
- You will need to rinse them in cool water and hull them. Hulling means removing the stems and leaves from the berries.
- When hulling, be sure to remove as little of the top of the berry as possible, as you want to keep your strawberry weight as close to two pounds as possible.
- Freeze them in a single layer for 15-20 minutes so that they can firm up slightly and have a texture similar to that of almost fully thawed frozen berries. You may need to add one to two tablespoons of water to the blender to loosen the mixture and blend it to a smooth consistency.
- Please note that if using fresh strawberries that are chilled or at room temperature, your sorbet mixture may take up to six to eight hours to freeze completely or enough to scoop.
When Using Frozen Strawberries
- When thawing the strawberries, thaw them almost 100, about ¾ of the way thawed. This will give a beautifully silky texture when they are just slightly still frozen.
- Please note that they do need to be soft enough, though, to not burn the engine of your blender when blending them. If they are too hard, your blender may not be able to handle it.
- Depending on the temperature of your freezer, your sorbet may take longer to freeze to a nice scoopable texture. The longer it is kept in the freezer, the harder it will get. If it is too solid to scoop easily, allow it to sit on the counter until you can easily get an ice cream scoop through it.

- Before zesting and juicing the lemon, rinse the skin in cool water and wipe off any coatings that may have been applied for preservation purposes at the store.

Ingredients
- 2 pounds fresh strawberries, washed, tops removed and halved (or 2 pounds of frozen strawberries)
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon fresh lemon zest
- 1 cup granulated sugar
Instructions
- To a high powered blender, or food processor, add the strawberries, granulated sugar, lemon juice and lemon zest.
- Blend on medium high speed for 30 seconds – 1 minute or until smooth.
- Pour the strawberry sorbet puree into a 9×5 loaf pan. Cover with plastic wrap being sure to not allow the plastic wrap to sit on the surface of the puree.
- Freeze the strawberry puree for a minimum of 3-4 hours or up to overnight. You want the strawberry sorbet to be at a scoopable consistency.
