You’ll need:

For The Brownies:

  • 1 box of strawberry cake mix
  • ½ cup of salted butter, melted
  • 2 large eggs
  • 2 tablespoons of strawberry gelatin

For The Cream Cheese Frosting:

  • 8-ounce block of cream cheese, softened
  • ¼ cup of salted butter, softened
  • 1 teaspoon of vanilla extract
  • ½ cup of powdered sugar
  • 1-2 tablespoons of heavy cream

For The Strawberry Shortcake Crumble:

  • 20 Golden Oreos (about ½ standard package)
  • 4 tablespoons of strawberry gelatin (the remaining amount in the package)
  • 4 tablespoons of salted butter, melted

Substitutions And Additions

CHOCOLATE CHIPS: Add ½-1 cup of white chocolate chips to the cake mix for a sweet surprise in this easy recipe.

How To Make This Strawberry Shortcake Brownies Recipe

STEP ONE: Preheat the oven to 350°F. Line an 8×8-inch glass baking dish with parchment paper, spray with non-stick cooking spray, and set aside.

You can also bake in a 9×13-inch baking dish. The brownies will be thinner, but there will still be enough frosting and cookie crumble to cover in thinner layers. The brownies will also bake in less time.

STEP TWO: Mix strawberry cake mix, ½ cup melted butter, eggs, and 2 tablespoons strawberry gelatin in a medium bowl until well combined. The batter will be thick.

PRO TIP:

Adding some of the strawberry gelatin into the brownie batter gives them a punch of extra flavor and also helps to make them extra chewy/fudgy.

STEP THREE: Use a rubber spatula to spread batter into the prepared baking dish. Bake for 25 minutes. Check for doneness by inserting a toothpick into the center of the brownies. They are done when the toothpick comes out clean. Cool completely.

PRO TIP:

Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your brownies as the suggested baking time approaches.

STEP FOUR: With an electric mixer, beat together the cream cheese, butter, and vanilla until combined. Add the powdered sugar and heavy cream and beat until smooth and fluffy.

PRO TIP:

Make sure your cream cheese is at room temperature so that you don’t end up with lumps in the cream cheese frosting.

STEP FIVE: Spread the cream cheese frosting over the cooled brownies.

STEP SIX: In the bowl of a food processor, pulse the golden Oreos until they are broken into pieces, making sure there are several larger chunks remaining.

STEP SEVEN: Sprinkle the remaining strawberry gelatin over the cookie crumbs and drizzle with melted butter. Pulse in the food processor a few more times until combined.

STEP EIGHT: Sprinkle the cookie crumbles over the strawberry brownies and press them down into the frosting.

STEP NINE: Cut brownies into squares and serve.

PRO TIP:

These brownies are thick and so sweet and delicious. We cut them into nine 2.5×2.5-inch pieces, but 16 smaller pieces would be great for serving with other treats.

    I made these for Thanksgiving and they we’re a hit. Although my icing was a bit thin putting it in the icebox made it stiff again.

    I’m very excited to try this recipe. I just have a question about the parchment paper. Could I just grease and flour the baking dish so I can leave it in the baking dish and just serve/cut as needed from the baking dish?
