Table of Contents
This quick and easy homemade Rotel dip is loaded with cheesy goodness, ground beef and spices. Best of all, with only three ingredients, it’s ready to eat in minutes.
Rotel dip is an easy dip recipe made with meat, cheese, and Rotel Tomatoes, which are petite, diced tomatoes with green chilis and spices. (It’s almost like salsa.)
This Rotel dip recipe never lets us down. It’s always a crowd pleaser– it has the perfect amount of spicy heat in each bite. You can dip just about anything into it. I usually serve it alongside tortilla chips, bagel chips, crackers, or veggies.
Ingredients Overview
The perfect three ingredient dip!
- Can of Rotel
- Velveeta
- Ground Beef
This combination of melty cheese, spicy tomatoes, and savory meat creates an irresistible dip that everyone loves.
How To Make Rotel Dip
The ultimate appetizer, Rotel Dip couldn’t get any easier to make:
- Start by browning your hamburger in a skillet until cooked through.
- As it’s cooking, cube the Velveeta cheese.
- Once the meat is thoroughly cooked, stir in the cubes of Velveeta cheese and the Rotel.
- Stir regularly as it melts and then it’s ready to serve.
Rotel Cheese Dip Recipe Tips
These simple tips will elevate your dip, making it a crowd-pleaser at any gathering
- For a perfect Rotel Cheese Dip every time, start with quality ingredients like freshly grated cheese, which melts more smoothly than pre-shredded varieties.
- If you prefer a spicier kick, opt for hot Rotel tomatoes or add a dash of your favorite hot sauce.
- To keep the dip warm and creamy during parties, use a slow cooker set on low heat. If the dip thickens too much, stir in a splash of milk to achieve the desired consistency.
- For added flavor and texture, mix in cooked sausage or ground beef.
Serving Velveeta and Rotel Dip
Rotel dip is traditionally served with tortilla chips, which provide a sturdy, salty crunch that pairs perfectly with the creamy, savory flavor of the dip.
It’s also popular with corn chips (like Fritos) or pretzels as well as crunchy veggie sticks like carrots, celery and bell peppers.
Fun Twists
Soft Pretzels – Serve these salty, chewy pretzels with Rotel dip for the perfect dunkable snack. (Pair with our amazing pretzel bites, too.)
Nachos – Drizzle Rotel dip over our sheet pan nachos for an extra layer of creamy, cheesy goodness.
Puffy Tacos – These tacos can be enhanced by serving them alongside Rotel Dip, adding a creamy, spicy element to the dish.
How to Store
Ensure your dip stays fresh and delicious for longer. Follow these steps for storing, refrigerating, and reheating your dip.
Cooling the Dip
Before storing Rotel dip, allow it to cool to room temperature. Storing the dip while it’s still hot can cause condensation, which may lead to a watery texture or potential spoilage. Letting it cool properly ensures it maintains its creamy consistency during storage.
Refrigerating – Short Term Storage
Once the dip has cooled, transfer it to an airtight container. This helps prevent the dip from absorbing odors from other foods in the refrigerator and maintains its freshness.
You can safely store Rotel dip in the fridge for up to 3-4 days. Make sure the container is sealed tightly to avoid any air exposure.
Reheating Rotel Dip
When you’re ready to enjoy the dip again, you can reheat it easily.
In the microwave, heat the dip in 30-second intervals, stirring between each round until it reaches the desired temperature.
On the stovetop, reheat over low heat, stirring occasionally to prevent the dip from burning. If the dip has thickened, adding a splash of milk or cream can help restore its creamy texture.
Freezing Rotel Dip
If you want to store Rotel dip for a longer period, freezing is an option. Transfer the dip to a freezer-safe container or resealable freezer bag.
You can store it in the freezer for up to 1-2 months. Keep in mind that the texture may change slightly due to the dairy content, but the flavor will remain intact.
Thawing and Reheating Frozen Dip
To thaw frozen Rotel dip, place it in the refrigerator overnight. When it’s fully thawed, reheat it gently on the stovetop or in the microwave, stirring frequently to ensure it heats evenly.
If the dip’s consistency has changed, adding a bit of milk or cream can help bring it back to its original texture.

I season the meat with taco seasoning and add a can of beans. What color/type is your choice. π
