If you have ever enjoyed the Little Debbie Cosmic Brownies, then you are going to love the homemade version. You can make these scrumptious, fudgy brownies topped with delicious fudge icing and a sprinkling of rainbow-colored sprinkles right from the comfort of your home.

If you’re in the mood for a sweet treat that’s out of this world, look no further than cosmic brownies. These colorful confections are so much more than your average chocolate treat.

With a layer of rainbow sprinkles and a chocolate ganache topping, cosmic brownies are an indulgent, decadent dessert that will satisfy any sweet tooth.

You’ll need: 

For The Brownies:

  • 1 cup of granulated sugar
  • 6 tablespoons of unsalted butter, softened 
  • 2 eggs
  • 1 egg yolk 
  • 1 teaspoon of vanilla extract
  • ½ cup of all-purpose flour 
  • ⅓ cup of cocoa powder 
  • ¼ teaspoon of salt 
  • 2 tablespoons of milk 

For The Frosting:

  • ⅓ cup of heavy cream
  • ½ cup of semi-sweet chocolate, chopped 
  • ½ cup of milk chocolate, chopped 
  • 1 tablespoon of butter, cut into 4 pieces 
  • ½ teaspoon of vanilla extract 
  • ¼ cup rainbow of chip sprinkles 

Substitutions And Additions

NUTS: While my kiddos tend to prefer the classic rainbow sprinkles, I prefer to put nuts on my Cosmic Brownies. I love to add crushed walnuts or pecans to half the batch so that we can all enjoy our brownies just the way we like them! 

How To Make This Copycat Cosmic Brownies Recipe 

The brownie batter will come together following our easy steps below. Once the brownies are cool, you can make the decadent chocolate ganache to layer on top, followed by the rainbow sprinkles.

STEP ONE: Preheat the oven to 350°F. Line a 9×9-inch square pan, with a piece of parchment paper, leaving an overhang on both sides. Coat the pan with cooking spray.

Lining the pan with parchment paper will allow you to lift the entire square of baked brownies out of the pan for easier cutting once cooled.

STEP TWO: Add the white sugar and butter to a large bowl. Use an electric mixer to beat together until light and fluffy, about 1 minute.

STEP THREE: Add the eggs and vanilla extract to the bowl. Then beat for another 2 to 3 minutes, until the mixture is pale yellow and thick.

STEP FOUR: Add the flour, cocoa powder, and salt. Mix on low speed until the ingredients are just incorporated. Pour in the milk and beat until smooth.

STEP FIVE: Pour the brownie batter into the prepared pan and spread it into an even layer. 

STEP SIX: Bake for 20 to 25 minutes until a toothpick inserted into the center of the pan comes out clean or with just a few crumbs attached to it. 

PRO TIP:

Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to check your brownies at the lower end of the recommended baking time.

STEP SEVEN: Let the brownies cool. 

STEP EIGHT: While the brownies are cooling, place the heavy cream in a medium bowl. Microwave in 20-second increments until the cream is very hot but not boiling. 

STEP NINE: Add the chopped chocolates to the cream. Let sit for a minute, then stir until a smooth chocolate mixture forms. Stir in the butter and vanilla extract until melted.

STEP TEN: Pour the chocolate over the top of the cooled brownies. Use a spatula to spread the chocolate into an even layer. Add the sprinkles on top of the chocolate. 

PRO TIP:

Some cosmic brownies can have nuts. Simply swap the nuts out for the sprinkles.

STEP ELEVEN: Chill the frosted brownies until they set, about 2-3 hours up to overnight. Use the parchment to lift the brownies out of the pan.

STEP TWELVE: Allow to come to room temperature for 20-45 minutes. Cut into squares and serve.

IN THE FREEZER: If you prefer to freeze this classic chocolate treat, let them cool completely, then simply wrap them tightly in plastic wrap and then in aluminum foil. Place them in the freezer for up to 3 months.
