You’ll need:

For the Cookies

  • 2 large eggs
  • ¼ cup vegetable oil
  • 1 box strawberry cake mix
  • 2 teaspoons baking powder
  • ½ cup chopped strawberries

For the Cream Cheese Frosting

  • 8 ounces of cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 2½ cups powdered sugar
  • 1 teaspoon vanilla extract

For the Topping

  • 6 sliced fresh strawberries

Substitution And Additions

FROSTING: If you don’t want to make the frosting from scratch, you can use store-bought cream cheese frosting instead in this Valentine’s cookies recipe.

DAIRY: I like using full-fat cream cheese in this delicious cookie recipe. I find that full-fat dairy products yield much tastier results. The low-fat or no-fat varieties have too much water, and they do not have a good texture or consistency with the final product.

How to Make This Strawberry Cookies with Cream Cheese Frosting Recipe

For the Cookies

STEP ONE: Preheat the oven to 325°F, and prepare 2 baking sheets with parchment paper. Set aside.

STEP TWO: Combine the eggs and vegetable oil in a large mixing bowl. Whisk until combined.

STEP THREE: In a separate small mixing bowl, whisk together the strawberry cake mix and baking powder until completely combined.

STEP FOUR: Add the dry ingredients to the wet ingredients. Mix with a spoon until completely combined and a thick batter forms. Fold in the chopped strawberries. Using an ice cream scoop, scoop 6 cookie dough balls onto each cookie sheet.

STEP FIVE: Bake for 15 to 20 minutes. When the cookies begin to brown, remove them immediately.

STEP ONE: In a large bowl with a hand mixer, beat the cream cheese, softened butter, and vanilla extract until smooth and creamy. Add the powdered sugar a little bit at a time and mix until completely combined.

Make sure the cream cheese is at room temperature, so you don’t end up with lumps in your cream cheese mixture.

STEP TWO: Transfer the frosting to a piping bag, and frost the cooled cookies. Top with crumbs from a crushed cookie and sliced strawberries.

PRO TIP:

You can also make these as sandwich cookies with the frosting on the inside.
