This watermelon salad is such a refreshing and delicious salad. The flavors of the sweet ripe watermelon, crisp fresh English cucumbers, mint leaves, and salty feta blend together in a medley of tastes and textures that are simply irresistible.

Watermelon Salad Ingredients

You’ll need:

For the Dressing

  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons fresh lime juice

For the Salad

  • 4 cups cubed seedless watermelon
  • 1½ cups (1 medium) cubed seedless English cucumber
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped or torn fresh mint leaves

PRO TIP:

If you are selecting a pre-cut watermelon, be sure to choose a good watermelon that is not too “grainy” in appearance.

SUBSTITUTIONS AND ADDITIONS

NUTS/SEEDS: Walnuts, cashews, or sunflower seeds can add a nice extra crunch to your salad.

SALT: You can add ½ teaspoon of kosher or flaky sea salt, but the feta and the lime juice should add the right amount of saltiness. 

BLUEBERRIES: I have had similar salads with these exact ingredients, except the watermelon was replaced with blueberries, and they are delicious! You could change up the fruit or add blueberries as well as the watermelon. I also imagine strawberries would taste yummy in the salad as well.

MINT: If you are not a fan of mint, you could substitute it with fresh basil or other fresh herbs that you like. It will give the salad a slightly different flavor, but it will be just as tasty.

ONION: Adding a little bit of red onion to the salad would give it a bit of a tangy flavor!

How To Make This Watermelon Salad Recipe

This watermelon and feta salad really should not be made too far in advance due to the excess liquid. Make just before serving.

For the Dressing

STEP ONE: In a small bowl, whisk together the olive oil and lime juice. Set it aside.

For the Salad Assembly

STEP ONE: Using a large bowl, add the cubed watermelon, cubed English cucumber, and mint leaves.

PRO TIP:

To make your watermelon extra fancy, instead of cutting it into cubes, you could use a melon baller to shape the watermelon pieces into spheres.

STEP TWO: Drizzle the simple lime dressing over the salad. Carefully toss the dressing and salad together.

PRO TIP:

Do this as gently as possible, the watermelon and cucumber will release a lot of juice.

Storage

IN THE FRIDGE: Since the fresh watermelon and cucumber release so much liquid, the leftovers will not keep longer than overnight. Store leftovers in an airtight container in the refrigerator. Drain any liquid off before serving.

IN THE FREEZER: We do not recommend storing this watermelon cucumber salad in the freezer as the ingredients will become mushy once thawed.
