  • 3 tablespoons of vegetable oil
  • 2 tablespoons of chocolate chunks or chips
  • 1 tablespoon of beaten egg (see notes)

PRO TIP:

If you want a larger serving of this fudgy chocolate brownie, make it in a separate mug. Do not increase the amounts in this recipe. Simply Increasing the quantities will not give you the same delicious result without significant adjustments to the recipe and cooking time.

Substitutions And Additions

MIX-INS: You can use any type of chocolate chip (or chip alternative – peanut butter chips, white chocolate chips, nuts, etc.) instead of the chocolate chunks for this single-serving brownie.

NUTS: Mixing in pecans or walnuts to this mug dessert will add a nice crunch.

GRANULATED SUGAR: To adjust the sweetness level or add a unique flavor twist, you can try using brown sugar or coconut sugar instead of granulated sugar.

Brown sugar will bring a deeper, caramel-like flavor, while coconut sugar imparts a subtle nutty taste.

MILK: If you’re dairy-free or prefer an alternative, swap regular milk for almond milk, soy milk, or oat milk.

The brownie batter ingredients can be made right in the mug itself. I like to stir the dry ingredients together first to make sure they’re well combined. Then mix in the wet ingredients.

STEP ONE: Stir together the dry ingredients in a 6 to 8-ounce microwave-safe mug. 

PRO TIP:

Brownie in a mug does not rise much; just a little bit. I recommend a 6 to 8-ounce mug. Depending on your mug’s shape/size, the brownie may not come up to the top edge but will still taste delicious.

STEP TWO: In a separate bowl, use a fork or small whisk to thoroughly beat one egg. Measure one tablespoon of the beaten egg and add it to the mug.

PRO TIP:

The egg in the recipe adds some leavening and makes a chewier brownie. You wouldn’t think a tablespoon of egg could make a difference in your mug cake, but it does!

Of course, you can skip this ingredient, and you will still have a nice brownie in a mug, but if you can, add in the egg. You can make about three recipes from one egg.

STEP THREE: Add vanilla, milk, and vegetable oil to the mug and stir to make a batter. Mix in half of the chocolate chunks and sprinkle the other half over the top.

STEP FOUR: Microwave mug brownie for 1 minute to 1 minute 15 seconds. The mug cake is done when it no longer appears wet across the top.
