You’ll need:
- ⅓ cup of all-purpose flour
- 1½ tablespoons of granulated sugar
- ¾ teaspoon of baking powder
- Pinch of salt
- ¼ cup of whole milk
- 1 tablespoon of unsalted butter, melted

Substitutions And Additions
TOPPING: You can swap out the fresh berries and maple syrup and top your pancake in a mug with a squirt of whipped cream and mini chocolate chips. Add other fresh fruit, a dash of cinnamon, or anything else you enjoy on your pancakes.
BUTTER: You can substitute the melted butter for a mild/neutral oil such as grapeseed, canola, or vegetable oil. I do not suggest olive or coconut oil as they have a stronger flavor profile that I find does not work well in this recipe. The butter yields the best overall flavor, in my opinion.
MILK: You can also make this easy breakfast recipe with 2% milk. The texture of non-fat milk, however, does not do well in baked goods, as we find that baked goods do best with a higher amount of fat.
SUGAR: I like to make my own vanilla sugar to use in quick recipes like this. You can also use maple sugar as well for a great flavor. I have not tested this recipe with a sugar substitute. If you use vanilla or maple sugar, you can omit the addition of vanilla extract.
