IN THE FREEZER: Once the bacon has cooled, you can freeze it for up to three months. Pop it on a baking tray covered with parchment paper and pop it in the fridge. Once it is frozen, transfer it to freezer bags. Put enough bacon in each bag for a typical meal or portion. Defrost before use overnight then reheat in the microwave for 30 seconds to add to a recipe.
