- 2 large eggs
- ¼ cup half-and-half
- ½ teaspoon vanilla extract
- 3 tablespoons salted sweet cream butter
- 1 teaspoon ground cinnamon
- 1 cup sugar
Strawberry and Cream Cheese Filling
- 8 ounces cream cheese, softened
- 4 tablespoon granulated sugar
- 5 to 6 ripe strawberries, capped and sliced very thin

ALMOND EXTRACT: You can also add a ½ teaspoon of almond extract to the egg mixture.

CINNAMON FILLING: To make this delicious cinnamon filling you will need ⅓ cup granulated sugar, 3 tablespoons melted salted sweet cream butter, and 2 teaspoon ground cinnamon. First, stir together all the ingredients using a small mixing bowl. Then, spread 2 tablespoons of the cinnamon mixture at the end of the flattened bread slices. Lastly, roll the flattened slices up.

For the French Toast
STEP ONE: Using a rolling pin, flatten each slice of bread.

STEP TWO: Trim off the edges of the bread. Cover the flattened bread with a clean towel to keep the bread from drying out.

STEP THREE: Using a small mixing bowl, whisk together the eggs, half-and-half and vanilla extract. Set milk mixture aside.

STEP FOUR: Using a pie plate or shallow dish, stir together the ground cinnamon and white sugar until well combined. Set it aside.

For the Strawberry and Cream Cheese Filling
STEP ONE: Using a small bowl, stir together the softened cream cheese and granulated sugar until well incorporated.

Make sure the cream cheese is at room temperature so you don’t end up with lumps in your mixture.

STEP TWO: Spread 2½ tablespoons of the cream cheese mixture at one end of the flattened bread slices.

STEP THREE: Evenly layer the thinly sliced strawberries on top of the cream cheese.

The thinner the strawberries are sliced, the easier they roll-up.

STEP FOUR: Carefully roll the flattened piece of bread up. Be careful not to apply too much pressure and squish out the cream cheese mixture. Set it aside and repeat the steps.

Cooking the Roll-Ups
STEP ONE: Using a 10 to 12-inch large skillet over medium heat to medium-high heat, melt butter.
STEP TWO: Dredge the roll-ups in the egg mixture and place them in the skillet. Be careful to keep the roll-ups separated enough so they can be easily turned. Keep an eye on the heat to ensure the butter does not burn.

STEP THREE: Using tongs, turn the French toast rolls a quarter turn at a time to ensure they brown evenly.

STEP FOUR: Once the roll-ups are golden brown all over, roll the roll-ups in the cinnamon-sugar mixture and serve immediately.
