Every recipe in this section skips the oven entirely, including the pies. The no-bake pumpkin pie and chocolate pudding pie are in this section rather than in Pies because they don’t need any bake time. What the fridge does that the oven can’t is set things cold and clean: the pudding firms up and slices neatly, the cream cheese layers hold without eggs, and the layers in a 9×13 stay distinct because they chill separately.
There are also a couple of dessert salads in here, and the distinction matters. Ambrosia is often called a fruit salad, but the sweetened cream cheese folded into it makes it tangier and thicker, putting it firmly in dessert territory.
