Ingredients
12sliceswhite sandwich bread
2largeeggs
¼cuphalf-and-half
½teaspoonvanilla extract
1teaspoonground cinnamon
1cupgranulated sugar
3tablespoonssalted sweet cream butter
Strawberry and Cream Cheese Filling
8ouncescream cheese,softened
4tablespoongranulated sugar
5 to 6ripe strawberries,capped and sliced very thin
Instructions
Using a rolling pin, flatten the slices of bread.
Trim off the edges of the bread. Cover the flattened bread with a clean towel to keep the bread from drying out.
Using a small mixing bowl, whisk together the eggs, half-and-half and vanilla extract. Set it aside.
Using a pie plate or shallow bowl, stir together the ground cinnamon and granulated sugar until well combined. Set it aside.
Strawberry And Cream Cheese Filling
Using a small mixing bowl, stir together the softened cream cheese and granulated sugar until well incorporated.
Spread 2½ tablespoons of the cream cheese mixture at one end of the flattened bread slices.
Evenly layer the thinly sliced strawberries on top of the cream cheese. Carefully roll the flattened bread up. Be careful not to apply too much pressure and squish out the cream cheese mixture. Set it aside and repeat the steps.
Cooking The Roll-Ups
Using a 10 to 12-inch skillet over medium to medium-high heat, melt the butter.
Dredge the roll-ups in the egg mixture and place them in the skillet. Be careful to keep the roll-ups separated enough so they can be easily turned. Keep an eye on the heat to ensure the butter does not burn.
Using tongs, turn the roll-ups a quarter turn at a time to ensure they brown evenly.
Once the roll-ups are golden brown all over, roll the roll-ups in the cinnamon-sugar mixture and serve immediately.
Notes
You can make these roll-ups ahead of time and would be a great idea to include them in a lunchbox.
Make sure the cream cheese is at room temperature so you don't end up with lumps in your mixture.
The thinner the strawberries are sliced, the easier they roll up.
