This hearty, homemade hamburger soup is ready in about half an hour, making it the perfect meal for busy weeknights. Seasoned ground beef, fresh vegetables and tomatoes come together for an easy dinner that the whole family will love.

HAMBURGER SOUP INGREDIENTS

You’ll need:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion
  • 1 stalk celery
  • 2 cloves garlic
  • 2 medium potatoes
  • 5 cups beef broth
  • 15-ounce can diced tomatoes
  • 8-ounce can tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 3 cups of frozen mixed vegetables (corn, green bean, carrot mix)

SUBSTITUTIONS AND ADDITIONS

FROZEN VEGETABLES: I use frozen veggies for this delicious soup, but you could also use fresh if you prefer. Mushrooms, cabbage, zucchini, squash, peppers, or beans would be a great addition, too! However, I do love how quick and easy the frozen vegetables are. 

ONION: I love sweet onions in this beef soup recipe, but you could also use white or yellow onion.

POTATOES: Russet potatoes are a great option for this recipe because they are nice and starchy. You could also use red potatoes. Some people substitute the potatoes for rice, barley, or pasta such as elbow macaroni or egg noodles.

BROTH: You can use low-salt beef broth if you would like to. I’ve also heard tips to substitute half beef broth and half chicken broth for a different flavor. I haven’t tried that, let me know if you do!

BEEF: You’ll definitely want to drain the excess grease off the hamburger after cooking. You can make this step easier by using lean beef. Or, you could use ground turkey, ground chicken, or ground pork, if you’d prefer.

ADD-INS: Some folks like adding cream of mushroom soup to this recipe to make the broth creamy. Others have suggested adding half a teaspoon of yellow mustard — or onion soup mix — for extra flavor!

HOW TO MAKE THIS HAMBURGER SOUP RECIPE

STEP ONE: In a medium-sized soup or stock pot, brown ground beef, diced onion, celery, and garlic until no pink remains in the ground beef. Drain any excess fat.

STEP TWO: Add potatoes, broth, tomatoes, tomato sauce, Worcestershire, Italian seasoning, salt, and pepper and simmer for 10 minutes.

STEP THREE: Add the frozen vegetables.

STEP FOUR: Simmer 15 to 20 minutes or until potatoes are tender.

PRO TIP:

Sprinkle a little bit of parmesan cheese on top or add shredded cheese before serving.

HOW TO SERVE

Serve your hearty hamburger soup with a green salad and fresh-baked, warm beer bread, cornbread or cheese biscuits. Or make our cheesy pull apart bread — you won’t be disappointed.

STORAGE

IN THE FRIDGE: You can keep leftover soup in the fridge for 3 to 5 days.

IN THE FREEZER: Once your hamburger soup is cooled, you can pour it into a freezer-safe container and store it for up to three months.

PRO TIP:

You could also freeze individual portions in freezer-safe containers to make it easy to reheat and serve for a quick lunch.

Can I use ground pork instead of ground beef?

    I made this soup last night and it was delicious. The only thing I did differently was cook a little longer so my frozen vegetables would get tender and add another can of diced tomatoes. This soup, for me, was even better the second day.
