Easy S’mores Muffins Recipe You Can Bake With Your Kids

Since Sam is finally starting to get excited about baking with me, I’ve been trying to establish “in the kitchen’ holiday traditions with him. We made chocolate stuffed shortbread cookies a little while ago. I’ve had the idea of easy-to-bake S’mores Muffins in my mind for quite a while now as a food idea for a camping party or an activity for a baking party. But the comfort-food quality of a muffin with marshmallows, chocolate and graham crackers seemed perfect for Christmas as well. As part of my ambassadorship with Gay Lea (a brand I love), I had received the more adorable kid-sized apron and chef’s hat. Sam donned them and we turned a snowy Sunday afternoon into a baking party. Because I created a lot of kid-friendly steps with these muffins, he had a blast. And, truth be told, so did I.

This recipe is made for baking with kids. I’ve eliminated as many steps as I could to make sure that things go quickly and that the focus is on the little ones having fun. I used a simple sour cream muffin batter as my basis because I thought it would be very forgiving (it was).

Step 1: Preheat your oven to 350 degrees. In a mixing bowl, combine 2 eggs, 1 250g carton of GayLea low fat sour cream, 1 teaspoon of vanilla, 1/2 cup melted Gay Lea unsalted butter, 1/2 vegetable or grape seed oil and 2/3 cup sugar. Blend until smooth.

Step 2: In a separate bowl, sift 2 cups of flour, 1/2 teaspoon of salt and 1/2 teaspoon baking soda.

Step 3: Slowly combine the dry ingredients into the bowl with the wet ingredients. 

Step 4: Fold in 1 cup of chocolate chips.

Step 5: Combine 2 tablespoons of melted butter with 1/2 cup of graham wafer crumbs. Mix and set aside.

Step 6: Line a muffin tin with two liners per muffin. (This will ensure the muffin comes out smoothly when the marshmallow melts.)

Step 7: Put 1 tablespoon of the muffin mixture into the bottom of a muffin cup. Press one large marshmallow into the mixture.

Step 8: Cover the marshmallows with 1 tablespoon of the muffin mixture. (Tip: Once the kids have finished, double check that the marshmallows have been completely covered. Or once, the marshmallow on the inside melts, you will have lopsided muffins.)

Step 9: Sprinkle 1/2 teaspoon of your reserved graham wafer mix over each muffin.

Step 10: Bake for 20 minutes. Remove from oven and add three mini marshmallows to the top of each muffin. Set under the oven’s broiler for about 30 seconds (keep a watchful eye) to toast the mini marshmallows a golden brown.

You’ll notice when the muffins are cut open, the marshmallow has disappeared. Sam though this was the coolest thing ever. {To be four again, LOL}
