This beef and noodle casserole is loaded with tender egg noodles, veggies, cheese, and hearty ground beef. It comes together in just thirty minutes, making it the perfect option for busy weeknights.

You’ll need:

  • 12 ounces of egg noodles
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, finely diced
  • 1 bell pepper, finely diced
  • 2 teaspoons minced garlic
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • ½ tablespoon Worcestershire sauce
  • ½ tablespoon soy sauce
  • 1 (14.5-ounce) can roasted garlic and onion tomatoes, not drained
  • 1 can cream of mushroom soup
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh parsley

SUBSTITUTIONS AND ADDITIONS

PEPPERS: Green peppers are optional in this ground beef casserole if your family doesn’t like them.

GREEN ONIONS: You can top your ground beef noodle casserole with sliced green onions as well.

CHEESE: You can use all cheddar cheese instead of the mix of mozzarella and cheddar if you want.

TOMATOES: If you don’t have flavored diced tomatoes, just use plain diced tomatoes and add a little bit more Italian seasoning.

MEAT: Ground turkey, ground pork, or Italian sausage would all work well in this cozy recipe.

How To Make This Beef And Noodle Casserole Recipe

You can assemble this ahead of time and leave covered in the fridge until you’re ready to bake.

STEP ONE: Preheat oven to 350°F. Cook egg noodles according to package directions for al dente, about 5 minutes.

STEP TWO: While noodles are cooking, in a large skillet over medium-high heat, add the olive oil and butter and cook ground beef for 4 to 5 minutes until it is no longer pink, breaking up the meat. Drain any excess grease.

STEP THREE: Add the onion, garlic, and diced pepper to the meat in the skillet and cook an additional 5 minutes until the green peppers are tender and the onions are translucent. Remove from the heat.

STEP FOUR: Stir in the salt, pepper, Italian seasoning, Worcestershire sauce, soy sauce, garlic and onion tomatoes, and cream of mushroom soup.
