Doritos Cheesy Chicken Casserole Ingredients

Doritos Cheesy Chicken Casserole raw ingredients that are labeled

You’ll need:

  • 1 (9.25-ounce) bag nacho cheese Doritos chips, crushed (reserve 1½ cups for topping)
  • 1 (10.5-ounce) can cream of chicken soup, undiluted
  • 1 (10.5-ounce) can cream of mushroom soup, undiluted
  • 1 (8-ounce) container sour cream
  • 1 (15.25-ounce) can southwest corn, drained
  • 1 cup mild chunky salsa
  • 3 cups shredded cooked chicken breast
  • 4 cups fiesta blend shredded cheese (divided 3 cups and 1 cup)

PRO TIP:

For shredding a lot of cooked chicken at once, put the cooked chicken breasts in your stand mixer, and with the regular mixing paddle, start slow and then gradually increase speed to about medium, and it will shred the chicken for you.

SUBSTITUTIONS AND ADDITIONS

CORN: You can substitute the southwest corn for Mexicorn if you have it on hand.

SALSA: You can substitute the salsa for canned diced tomatoes with green chiles or Rotel tomatoes if you prefer. You can also use homemade salsa if you prefer. Check out our salsa recipe for a tasty option.

DORITOS: You can substitute the nacho cheese Dorito chips for any flavor of Doritos. What about Cool Ranch Doritos for an exciting flavor twist?

CHICKEN: If you don’t have time to make cooked chicken specifically for this Doritos chicken casserole, you can pick up a cooked chicken at the grocery store and use the rotisserie chicken meat instead.

CHEESE: The best choice for this cheesy chicken Dorito casserole is a Fiesta or Mexican cheese blend, but you could also opt for cheddar cheese.

I absolutely love making casseroles & of course eating them too😋 I would use the nacho dorito chips with a Tex Amex cheese😋😋

    • Jeff says

Making this for dinner, my question is, can you prepare and leave in refrigerator for 8hrs or would you just assemble before putting into oven? I didnt know if the chips top and bottom would get mushy being in the fridge that long. Thank you.

  4. Kimberly says

Or family would NOT make this extra spicy! In fact, our family is so “plain white bread” that we might not even use the salsa. I know, please don’t judge. But everything else we absolutely love so I’ve already added it to the menu for August.

  5. Mary says

    5 stars
I would make this mildly spicy and use cool ranch Doritos.
I would top with a lettuce salad and Guacamole

I love this recipe. I would serve it with sour cream, sliced green onions, some extra cheese and salsa for toppings!
    Thank you for a sharing.

  7. Lauren says

    1) yes I would make it extra spicy – maybe with diced jalapeños or Cajun seasoning
    2) I would use nacho dortrios. I don’t want to make the chips the main focus of this
    3) I would use fiesta, Mexican blend, or Colby Jack cheeses
    4) I might add onions (in the casserole) or ritz crackers on the top.

  8. Cal Abriola says

I can’t wait to make this! I will be using nacho cheese Doritos but if my kids weren’t eating it I’d make it spicier!

I’m always looking for recipes that my granddaughter rates as “I want this for my birthday dinner!” That translates to ⭐️⭐️⭐️⭐️⭐️! Next time I think I will try adding a can of green chilies for a touch of heat. Saw in the suggestions about using Cool Ranch Doritos…that is something else I will be trying!

  16. Tracey says

    Absolutely loved this recipe.
First time cooked as directed. However, being in Australia, we could not get the corn mix, so I used a can of corn kernels and cut up a capsicum to go with it.

The second time I cooked it, I added diced onion and served with sour cream on top and the left over Doritos.
