You’ll need:
- 1 (9.25-ounce) bag nacho cheese Doritos chips, crushed (reserve 1½ cups for topping)
- 1 (10.5-ounce) can cream of chicken soup, undiluted
- 1 (10.5-ounce) can cream of mushroom soup, undiluted
- 1 (8-ounce) container sour cream
- 1 (15.25-ounce) can southwest corn, drained
- 1 cup mild chunky salsa
- 3 cups shredded cooked chicken breast
- 4 cups fiesta blend shredded cheese (divided 3 cups and 1 cup)
PRO TIP:
For shredding a lot of cooked chicken at once, put the cooked chicken breasts in your stand mixer, and with the regular mixing paddle, start slow and then gradually increase speed to about medium, and it will shred the chicken for you.
SUBSTITUTIONS AND ADDITIONS
CORN: You can substitute the southwest corn for Mexicorn if you have it on hand.
SALSA: You can substitute the salsa for canned diced tomatoes with green chiles or Rotel tomatoes if you prefer. You can also use homemade salsa if you prefer. Check out our salsa recipe for a tasty option.

How To Make This Doritos Cheesy Chicken Casserole Recipe

This is a great freezer meal. Double your recipe and make a second casserole dish of this delicious meal for later. Hold off on adding the top Doritos and cheese so that you have a fresh crunchy topping when you thaw and bake.
STEP ONE: Preheat the oven to 350°F. Generously spray a 9×13-inch casserole dish with nonstick cooking spray. Set it aside.
STEP TWO: Crush the bag of Doritos, and pour all but 1½ cups of the crushed Doritos into the bottom of the prepared baking dish.

A rolling pin is a great tool to crush the Doritos in the bag.
STEP THREE: Using a medium-sized mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and sour cream until smooth.
STEP FOUR: In a large mixing bowl, combine the drained corn, salsa, shredded chicken breast, and 3 cups of shredded cheese. Add the soup and sour cream mixture and stir until well combined.
STEP FIVE: Evenly spread the creamy chicken mixture over the top of the crushed chips.
STEP SIX: Evenly spread the reserved 1½ cups of chips over the layer of the chicken mixture.
STEP SEVEN: Evenly sprinkle the reserved 1 cup of cheese over the crushed chips layer.
STEP EIGHT: Bake for 25 minutes. Serve while hot.

Making this for dinner, my question is, can you prepare and leave in refrigerator for 8hrs or would you just assemble before putting into oven? I didnt know if the chips top and bottom would get mushy being in the fridge that long. Thank you.

Absolutely loved this recipe.
First time cooked as directed. However, being in Australia, we could not get the corn mix, so I used a can of corn kernels and cut up a capsicum to go with it.
The second time I cooked it, I added diced onion and served with sour cream on top and the left over Doritos.
