This easy, delicious, homemade tater tot casserole is a simple family favorite. Loaded with ground beef, seasonings, cheese, and veggies then topped with a layer of golden tater tots, this quick and simple dinner recipe is a crowd-pleaser. TATERTOT CASSEROLE INGREDIENTS

You Will Need:

  • 1 pound Laura’s Lean ground beef
  • 1 small onion, diced
  • 1 tsp minced garlic
  • 1 can cream of mushroom soup
  • ½ cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 cup frozen mixed veggies (I used a blend with green beans, carrots, peas, and corn)
  • 8 oz cheddar cheese, shredded
  • 32oz bag frozen tater tots

SUBSTITUTIONS AND ADDITIONS

MEXICAN: Add black beans, taco seasoning, green chiles, enchilada sauce, and corn to spice up Taco Tuesday. Serve with sour cream on top.

SOUP: If you don’t like cream of mushroom, you can use another cream soup instead.

BACON: You could also crumble crispy bacon on top before serving.

HOW TO MAKE THIS TATERTOT CASSEROLE

STEP ONE: In a large skillet cook ground beef, onion, and garlic until beef is cooked through. Drain if needed.

STEP TWO: Add cream of mushroom soup, sour cream and Worcestershire sauce to the ground beef and mix thoroughly. Stir in vegetables.

STEP THREE: Spray a 9×13 baking dish with cooking spray. Place the beef and vegetable mixture in the bottom of the dish. Top with 4 oz of the freshly shredded cheddar cheese.

STEP FOUR: Place frozen tater tots on top of the cheese layer. Depending on the size/shape of your dish, you may have some leftover.

STEP FIVE: Bake at 350 degrees for 45 minutes. Remove from oven and top with the remaining 4 oz freshly shredded cheddar cheese. Bake for another 5 minutes, or until cheese is melted.

How to Store

You can make this 24-hours ahead of time and keep covered in the fridge until you’re ready to bake.

After baking, store in an airtight container for up to three months.

Ingredients
  

  • 1 pound lean ground beef
  • 1 small onion diced
  • 1 tsp minced garlic
  • 1 can cream of mushroom soup
  • ½ cup sour cream
  • 1 T Worcestershire sauce
  • 1 cup frozen mixed veggies I used a blend with green beans, carrots, peas, and corn
  • 8 oz cheddar cheese freshly shredded, divided
  • 32 oz bag frozen tater tots

Instructions
 

  • Preheat the oven to 350 degrees. Spray a 9×13 baking dish with cooking spray.
  • In a large skillet cook ground beef, onion, and garlic until beef is cooked through. Drain if needed.
  • Add cream of mushroom soup, sour cream, and Worcestershire sauce to the ground beef and mix thoroughly.
  • Stir in vegetables.
  • Place the beef and vegetable mixture in the bottom of a 9×13 baking dish. Top with 4 oz of freshly shredded cheddar cheese.
  • Place frozen tater tots on top of the cheese layer. Depending on the size/shape of your dish, you may have some leftover.
  • Bake in preheated oven for 45 minutes. Remove from oven and top with the remaining 4 oz freshly shredded cheddar cheese. Bake for another 5 minutes, or until cheese is melted.

    I’ve made tater tot casserole for years and never cook the ground beef. I just lat beef on bottom, put on onions, green beans, cheese and mushroom soup. Add cheese and then top with tater tots. Bake 350 for 1 hour. Delish. I’ll have to try it this way.
