Last year, I started hearing all about the keto diet—it seemed everywhere I went, someone was talking about their new low-carb lifestyle. Of course, I was intrigued and wanted to learn more.

Today, I’m going to be sharing with you some of the tips we’ve learned to make the switch and stay on track while feeling great and having lots of energy! 

One of the biggest challenges I’ve faced while sticking to low-carb is meal prep and snacks. This printable low-carb snack list helps me a lot.

As a busy mama, quick options are a must for me. This is no exception when it comes to being low carb! I don’t have endless hours to spend prepping in the kitchen, so I’ve been very intentional about making sure this lifestyle can work for me. 

Peanut and Chocolate

This is just one of the reasons why I love Atkins Shakes so much. I picked them up during a shopping trip at Safeway and they’re now a regular staple in my arsenal. They’re keto-friendly when used with Atkins ketogenic programs. 

Atkins is all about a balanced eating approach with optimal protein, healthy fats, and fiber-rich foods. With products like their delicious, creamy, and satisfying protein shakes, it’s so much easier to stay on track with your lifestyle changes.

I love how simple and quick they are to enjoy while on the go—it’s a great option for me for breakfast or during a hectic day. The Atkins Shakes have become a must-have for me.

To help me stay on track all week, I prep our food over the weekends now. After grocery shopping, I make sure that my snack options are ready to go for the week so that I can grab and go whenever I need something. This has really helped me stay on track and not deviate from eating low-carb.

I always have Atkins Shakes on hand, as well as we a mix of veggies, cheese, and meats. I also usually make at least one little goodie to munch on, too. These keto chocolate peanut butter balls are a favorite for me.

Ingredients for Keto Chocolate Peanut Butter Balls

  • ¾ Cups Coconut Flour (plus a little if batter is too thin)
  • 2 Cups Smooth Natural Peanut Butter
  • ½ Cup Peanuts, smashed 
  • 1 Cup Dark Chocolate Melting Wafers
  • ½ Tbsp Coconut Oil
  • 1 Package Sweetener, divided

How to Make Keto Chocolate Peanut Butter Balls

Line a 9×13 baking sheet with parchment paper and set aside. 

Combine the coconut flour, natural peanut butter, and smashed peanuts, and ¾ package sweetener in a medium bowl. The batter should be sticky, but not thin. If the batter is too thin then add an additional ¼ cup of coconut flour. 

Place the peanut butter mixture in the refrigerator for 30 minutes. 

In a small bowl, combine the dark chocolate, coconut oil, and ¼ packet of Sweetener. Place in microwave for 30 seconds. Stir, and return to microwave for an additional 30 seconds. Stir well.

Take peanut butter mixture out of the refrigerator and roll into bite-size balls. Using a spoon, dip each ball in chocolate and then place on the parchment paper.

Refrigerate balls until ready to eat.

Ingredients
  

  • 3/4 Cups Coconut Flour plus a little if batter if too thin

  • 1 Package Truvia Sweetener divided

Instructions
 

  • Line a 9x13 baking sheet with parchment paper and set aside.
  • Combine coconut flour, natural peanut butter, and smashed peanuts, and ¾ package Truvia in a medium bowl. The batter should be sticky, but not thin. If the batter is too thin then add ¼ additional cup of coconut flour.
  • Place the peanut butter mixture in the refrigerator for 30 minutes.
  • In a small bowl, combine dark chocolate, coconut oil, and a ¼ packet of Truvia Sweetener. Place in microwave for 30 seconds. Stir, and return to microwave for an additional 30 seconds. Stir well.
  • Take peanut butter mixture out of the refrigerator and roll into bite-size balls. Using a spoon, dip each ball in chocolate and then place on the parchment paper.
  • Refrigerate balls until ready to eat.

    I would love to make this peanut butter keto bites but the problem is I don’t know how much Stevia is in a “Package”, would you please give an approximate weight on that? as I buy Stevia by the 9.7 ounce Package!!! See the Problem?
