These easy keto chocolate peanut butter balls are an excellent snacking option when you’re craving something sweet but you’re living the low-carb keto life. A rich peanut butter center is wrapped in a creamy chocolate coating for these delightful little bites.

Keto Chocolate Peanut Butter Balls Ingredients

You’ll need:

  • ¾ cup coconut flour (plus a little more if batter is too thin)
  • 2 cups smooth natural peanut butter
  • ½ cup peanuts, smashed 
  • 1 cup dark chocolate melting wafers
  • ½ tablespoon coconut oil
  • 1 package sweetener, divided

How to Make This Keto Chocolate Peanut Butter Balls Recipe

PRO TIP:

This recipe is super easy to double, freezes really well, and makes excellent gifts to share.

STEP ONE: Line a 9×13 baking sheet with parchment paper and set it aside. 

STEP TWO: Combine the coconut flour, natural peanut butter, smashed peanuts, and ¾ package sweetener in a medium bowl. The batter should be sticky, but not thin. If the batter is too thin then add an additional ¼ cup of coconut flour. 

STEP THREE: Place the mixing bowl with the peanut butter mixture in the refrigerator for 30 minutes. 

STEP FOUR: In a small bowl, combine the dark chocolate, coconut oil, and ¼ packet of sweetener. Place in microwave for 30 seconds. Stir, and return to microwave for an additional 30 seconds. Stir well.

STEP FIVE: Take the peanut butter mixture out of the refrigerator and roll it into bite-size balls. You can use a small cookie scoop to make uniform-sized balls.

PRO TIP:

If you are rolling the balls with your hands and are finding that it is sticky work, lightly spray your hands with cooking spray to prevent the peanut butter from sticking to you.

STEP SIX: Using a spoon, dip each ball in the melted chocolate and then place it on the parchment paper. 

PRO TIP:

The chocolate has to be quite hot and the peanut butter balls really cold for the chocolate to stick properly. If you find it is taking too much time, you may want to keep the peanut butter balls in the fridge and only take a few out at a time to work with.

STEP SEVEN: Refrigerate your no-bake peanut butter balls until ready to eat.

I would suggest putting them in the freezer on the parchment paper on a cookie sheet until they’re totally frozen and then pop them in a container or freezer bag. Once you’re ready to eat more, just remove and allow to thaw in the fridge until you’re ready to eat.
