I would use vanilla frosting flavored with peppermint extract. I would add some crushed peppermint to the cake mix.

I would substitute mini chocolate chips for the sprinkles. Chocolate frosting would be good instead of vanilla. Can you tell I like chocolate! Ice tea would be a great way to wash it down.
