So why settle for a boring old drink when you can wow your friends with these sweet and boozy blue Hawaiian Jell-O shots?

You’ll need:

  • 1 (6-ounce) box of berry blue Jell-O mix 
  • 1 cup of boiling water
  • 1 cup of cold water
  • 1 cup of pineapple juice
  • ¾ cup of Malibu coconut rum
  • ¼ cup of blue curacao
  • Maraschino cherries (for garnish)
  • Fresh pineapple chunks (for garnish)

PRO TIP:

Use up to 1½ cups of alcohol for a stronger Jell-O shot. For a lighter jello shot, you can use additional cold water or pineapple juice and not as much alcohol. You need four cups total of liquid to combine with the Jell-O mixture. 

Substitutions And Additions

PINEAPPLE JUICE: I like to get the little mini (6-ounce) cans of pineapple juice to keep on hand in my pantry.

This way, I do not need to open a large bottle of pineapple juice if I am only using it to make a couple of cocktails.

How To Make This Blue Hawaiian Jell-O Shots Recipe

Making Jell-O shots is not much harder than making Jell-O. You’ll follow the same process by adding hot and cold water before mixing in a few fun extras and chilling until the shots set.

STEP ONE: In a medium bowl or large (4-cup) measuring cup with a spout, combine the Jell-O mix and 1 cup of boiling water until the Jell-O is fully dissolved.

STEP TWO: Once the Jell-O is fully dissolved, stir in the cold water, pineapple juice, Malibu rum, and blue curaçao. Mix until combined.

The ratio of each type of alcohol and fruit juice will vary the flavor somewhat – you can adjust however you like. Do not use more than 2 cups of alcohol to ensure that the Jell-O still sets up properly.

STEP THREE: Carefully pour the Jell-O mixture between small plastic Jell-O shot cups. Fill just under the top so they don’t spill.

PRO TIP:

Setting the Jell-O shot glasses on a rimmed baking sheet will help make it easier to transport them to the fridge for chilling.

STEP FOUR: Transfer Jell-O shots to the refrigerator and chill for four hours until set.

PRO TIP:

The Jell-O shots may firm up faster than 4 hours. If you are using shallower plastic containers and if you use icy cold water for your cold water, they will not take as long to set.

STEP FIVE: Keep Jell-O shots refrigerated until consumed. Just before serving, top each jello shot with a maraschino cherry and a small piece of fresh pineapple.

How To Serve

This Jell-O shot version of a classic blue Hawaiian cocktail is the perfect addition to summer parties or even a summer-themed winter party.

Storage

IN THE FRIDGE: Jell-O shots will keep in the refrigerator for up to seven days.

Cover if you use containers that do not come with individual lids; otherwise, pop the lids on the plastic cups for storage.

Do not store them with the fruit pieces on top of the jello.

IN THE FREEZER: This fun tropical Jell-O shot recipe doesn’t tend to freeze very well because of the gelatin and alcohol.

If you have any leftover jello shots, you can store them in the fridge for up to a week with their lids tightly on. You can make them three days ahead of your party before serving, but make sure you are storing the containers with the lids on.

Can you freeze blue jello shots?

I don’t find that jello shots freeze well because of the gelatin and alcohol. While you can pop them in the freezer for a few minutes to help speed along the setting process, you shouldn’t store them in the freezer after they’re done.

Can I make this simple recipe ahead of time?

These jello shots are the perfect recipe to put together a couple of days before your party. Just make sure they are well covered and kept in the fridge.
