Ingredient Substitutions & Additions
This recipe makes it easy to swap out any veggies or meat that you have on hand for what we’ve used. Here’s a few popular substitutions & additions:
SHRIMP: If you’re craving some seafood, substitute the chicken for 1 pound of shrimp. Reserve a small amount of the Italian seasoning for your shrimp, and toss them in the seasoning and olive oil before adding them to your sheet pan for the last 15 minutes of cooking.
CHERRY TOMATOES: Tomatoes go perfectly with the Italian flavor of this sheet pan dinner. Substitute or add 1 cup of whole cherry tomatoes and cook them with (or instead of) your green beans.
ZUCCHINI: Another popular addition, sliced zucchini is tasty with this sheet pan dinner. Slice 1 zucchini and cook it next to your chicken.
BABY RED POTATOES: Instead of russet potatoes, you can use baby red potatoes and slice them in half for this recipe.
How to make this recipe:
STEP 1: Preheat the oven to 350 degrees.
STEP 2: Wash the green beans and potatoes. Cut off the ends of the green beans and then cut them in half.
STEP 3: Cut the potatoes into bite sized pieces. (If you prefer, you can also peel your potatoes.)
PRO TIP: Cutting your potatoes all the same size will help them cook evenly. And cutting them into small, bite-sized pieces will make sure they cook at the same speed as the green beans.
STEP 4: In a medium bowl, combine the potatoes, onion, 2 tablespoons of olive oil and 1 packet of dry Italian seasoning mix. Stir well to combine.
STEP 5: Pat the chicken breasts dry. If needed, pound the chicken breasts to an even thickness.
STEP 6: Place the green beans on one side of the baking sheet, the chicken breasts in the middle, and the potatoes on the other side. Add a few pats of butter on top of each section of your pan, distributing them evenly.
STEP 7: Sprinkle the remaining dry italian seasoning packet, salt and pepper over the pan.
STEP 8: Cover with foil and bake in the preheated oven for 30 minutes.
STEP 9: Remove the pan from the oven, stir the potatoes and green beans and place the pan back in the oven. Bake uncovered for 30 minutes more.
Sheet pan dinners cook all of their ingredients together on one sheet pan in the oven. They’re usually easy recipes that are quick to make — simply prepare all of your ingredients, add them to the sheet pan and then bake it in the oven. This makes for less prep time and less clean up time.
This Italian Chicken Sheet Pan Dinner is an easy all-in-one meal for a busy night. It’s a simple way to cook chicken and vegetables with plenty of flavor, quick prep and no mess.
