You will need:

  • 3 – 4 chicken breasts
  • 4 medium russet potatoes
  • 1 small yellow onion, chopped into small pieces
  • 2 cups fresh green beans
  • 2 packages dry Italian dressing mix
  • 1 stick butter, cut into 12 equal pieces
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil

SUBSTITUTIONS AND ADDITIONS

This recipe makes it easy to swap out any veggies or meat that you have on hand for what we’ve used. Here’s a few popular substitutions & additions:

SHRIMP: If you’re craving some seafood, substitute the chicken for 1 pound of shrimp. Reserve a small amount of the Italian seasoning for your shrimp, and toss them in the seasoning and olive oil before adding them to your sheet pan for the last 15 minutes of cooking.

CHERRY TOMATOES: Tomatoes go perfectly with the Italian flavor of this sheet pan dinner. Substitute or add 1 cup of whole cherry tomatoes and cook them with (or instead of) your green beans.

ZUCCHINI: Another popular addition, sliced zucchini is tasty with this sheet pan dinner. Slice 1 zucchini and cook it next to your chicken.

BABY RED POTATOES: Instead of russet potatoes, you can use baby red potatoes and slice them in half for this recipe.

HOW TO MAKE THIS ITALIAN SHEET PAN DINNER RECIPE

STEP ONE: Preheat the oven to 350°F.

STEP TWO: Wash the green beans and potatoes. Cut off the ends of the green beans and then cut them in half.

STEP THREE: Cut the potatoes into bite-sized pieces. (If you prefer, you can also peel your potatoes.)

PRO TIP: Cutting your potatoes all the same size will help them cook evenly. And cutting them into small, bite-sized pieces will make sure they cook at the same speed as the green beans.

STEP FOUR: In a medium bowl, combine the potatoes, onion, 2 tablespoons of olive oil and 1 packet of dry Italian seasoning mix. Stir well to combine.

STEP FIVE: Pat the chicken breasts dry. If needed, pound the chicken breasts to an even thickness.

STEP SIX: Place the green beans on one side of the baking sheet, the chicken breasts in the middle, and the potatoes on the other side. Add a few pats of butter on top of each section of your pan, distributing them evenly.

STEP SEVEN: Sprinkle the remaining dry Italian seasoning packet, salt and pepper over the pan.

STEP EIGHT: Cover with foil and bake in the preheated oven for 30 minutes.

STEP NINE: Remove the pan from the oven, stir the potatoes and green beans and place the pan back in the oven. Bake uncovered for 30 minutes more.
