You’ll need:
- 1 pound of white American cheese
- ½ cup of milk
- 4-ounce can of green chilies
- 1 teaspoon of taco seasoning
Substitutions And Additions
CHEESE: I used sliced cheese, but you can also cube a block of cheese if you’d rather. If you’d like to mix in other kinds of cheese for even more texture and cheesy goodness, try pepper jack, Monterey jack, or mozzarella.
MEAT: For a heartier dip recipe, add half a pound of cooked ground beef or chorizo to your creamy white queso dip. You can also add half a cup of crispy, cooked, and crumbled bacon on top before serving.
BEANS: If you’re looking for added texture, add a cup of black or pinto beans, or serve alongside yummy refried beans.

STEP ONE: Place the cheese and the milk in a medium-sized saucepan over medium-low heat and stir until the cheese has melted.

Once the milk reaches a light simmer, immediately reduce it to low. Never turn the heat higher than medium/low past that point.
STEP TWO: Remove from heat and add the green chiles and taco seasoning and mix together. If you’re serving at a party, I would suggest keeping it warm in a slow cooker on low.

If your cheese dip is too thin, you can add in a tablespoon of cornstarch to help thicken it up. If your cheese dip is too thick, add a little chicken broth to help thin it out.
STEP THREE: Serve dip with chips, pretzels, or vegetables.

I could eat this entire bowl by myself… it’s SO GOOD. It’s perfect for a game day appetizer but it’s also great on top of all our Mexican favorites. It’s even better than the cheese dip at our local restaurant.
