Ingredients
1poundwhite American cheese
½cupmilk
4ouncegreen chilies
1teaspoontaco seasoning
Instructions
Place the cheese and the milk in a medium-sized saucepan over medium-low heat and stir until the cheese has melted.
Remove from the heat and add the green chilies and taco seasoning and mix together.
Serve plain with chips, pretzels, or vegetables. You can also top with homemade pico de gallo.
Notes
Mix all the pico de gallo ingredients together and use it as a topping for the dip.
Pico De Gallo Ingredients: 2 Roma diced tomatoes, ¼ cup chopped onion, ¼ cup chopped cilantro, and 1 tablespoon lime juice.
As you add in batches of cheese to melt, be sure to whisk constantly to make sure it stays creamy and melts perfectly.
Once the milk reaches a light simmer, immediately reduce it to low. Never bring the heat over medium/low past that point.
If your cheese dip is too thin, you can add a tablespoon of cornstarch to help thicken it up. If your cheese dip is too thick, add a little chicken broth to help thin it out.
