These classic turkey tenders have tons of flavor and are an easy dinner option that will please the whole family. Sliced turkey breast is coated with a crispy batter of bread crumbs, parmesan cheese, and spices, then baked; perfect for dipping.

You’ll need:

  • 2 eggs
  • 2 tablespoon olive oil
  • 2 tablespoons butter, melted
  • Grated zest and juice of one lemon
  • 1 tablespoon chopped fresh parsley
  • 2 teaspoons minced garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2½ pounds turkey tenders (or 2 to 3-pound turkey breast, plain or oven-ready)
  • 1 cup Italian seasoned bread crumbs
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup fresh grated parmesan cheese
  • Cooking oil spray (olive oil is best)

SUBSTITUTIONS AND ADDITIONS

ITALIAN: You can add a teaspoon of Italian seasoning to your spice mix as well for a more Italian-flavored kick.

CORN FLAKES: Instead of bread crumbs, you could use crushed cornflakes as a great option.

TURKEY: If you can’t find turkey tenders in your store, you can make your own by picking up a turkey breast. You will be cutting against the grain, so look for the white veining in the meat. Whatever direction the white “stripes” are going, you cut opposite. Cut in about 1 to 1½-inch strips. You can then cut those strips to the size you want for your tenders.

SPICY: If you want a little added kick to your tender coating for this easy turkey recipe, add a dash of chili powder or cayenne pepper to the seasoning mix.

How To Make This Turkey Tenders Recipe

STEP ONE: In a large bowl, whisk together the egg, olive oil, melted butter, lemon juice, lemon zest, parsley, salt, pepper, and garlic.

STEP TWO: Add the turkey tenders and make sure they all have been coated in the egg mixture. Cover with plastic wrap and refrigerate to marinate for one hour or, even better, overnight.

STEP THREE: Preheat the oven to 400°F.

STEP FOUR: Prepare a large cookie sheet with a cooling rack placed on it. Spray the cooling rack with nonstick spray.

STEP FIVE: In a shallow pie plate, mix together the bread crumbs, paprika, garlic powder, onion powder, and parmesan cheese.

STEP SIX: Place each turkey tender into the breadcrumb mixture and coat well on both sides.

STEP SEVEN: Place the turkey tenders onto the sheet pan on the cooling rack. Lightly spray the turkey tenders with olive oil cooking spray.

STEP EIGHT: Bake turkey tenders for 20 minutes. Since you are using a cooling rack, you don’t have to turn them over during cooking.

Place under broiler for 3 minutes to get even crispier.

IN THE FREEZER: You could make a double batch of these turkey tenders and freeze half for a fast snack, lunch, or dinner on a busy day. Place the frozen tenders on a baking sheet and reheat for 18 to 20 minutes at 400°F.
