2eggs
2tablespoonsolive oil
2tablespoonsbutter,melted
1lemonGrated zest and juice
1tablespoonchopped fresh parsley
2teaspoonsminced garlic
½teaspoonsalt
½teaspoonpepper
2½poundsturkey tenders,or 2 to 3 pound turkey breast, plain or oven-ready
1cupItalian seasoned bread crumbs
1teaspoonpaprika
½teaspoongarlic powder
½teaspoononion powder
1cupfresh grated parmesan cheese
Cooking oil spray(olive oil is best)
Instructions
In a large bowl, whisk together the egg, olive oil, melted butter, lemon juice, lemon zest, parsley, salt, pepper, and garlic.
Add the turkey tenders and make sure they all have been coated in the egg mixture. Cover with plastic wrap and refrigerate to marinate for one hour or, even better, overnight.
Preheat oven to 400°F.
Prepare a large cookie sheet with a wire cooling rack placed on it. Spray the cooling rack with nonstick spray.
In a shallow pie plate, mix together the bread crumbs, paprika, garlic powder, onion powder, and parmesan cheese.
Place each turkey tender into the bread crumb mixture and coat well on both sides.
Place the turkey tenders onto the sheet pan on the cooling rack. Lightly spray the turkey tenders with olive oil cooking spray.
Bake turkey tenders for 20 minutes. Since you are using a cooling rack, you don’t have to turn them over during cooking.
Notes
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your tenders as the suggested baking time approaches.
Place tenders under the broiler for 3 minutes to get even crispier.
