Delicious peanut butter cookies in the air fryer are the perfect combination of sweet and savory. 

The peanut butter gives them a rich, nutty taste, while the air fryer gives them a light and crunchy texture. 

With their crumbly texture and nutty aroma, these easy air fryer cookies will surely be a new favorite.

You’ll need:

  • 1¼ cups of all-purpose flour
  • ¾ teaspoon of baking soda
  • ½ cup of salted sweet cream butter, softened
  • ½ cup of creamy peanut butter (your favorite brand, I used Reese’s creamy peanut butter)
  • ¾ cup of granulated sugar (divided into ½ cup and ¼ cup)
  • ½ cup of light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon of pure vanilla extract

CRUNCHY PEANUT BUTTER: You can substitute crunchy peanut butter for creamy peanut butter in this air fryer peanut butter cookie recipe. 

NATURAL PEANUT BUTTER: You can substitute natural peanut butter for regular creamy peanut butter in this easy air fryer recipe.

How to Make This Air Fryer Peanut Butter Cookies Recipe

The air fryer makes whipping up a batch of these cookies so easy, and they come out tasting even better than traditional peanut butter cookies. Make sure to follow the directions for your model of air fryer.

STEP ONE: Add the flour and baking soda to a small mixing bowl. Whisk to combine. Set the flour mixture aside.

STEP TWO: In the bowl of a stand mixer or a medium-sized mixing bowl and a handheld electric mixer on medium-high speed, beat together the butter and peanut butter for 1 minute.

STEP THREE: Add ½ cup each of granulated and brown sugar to the peanut butter mixture. Continue mixing for 1½ to 2 minutes until completely incorporated.

STEP FOUR: Add the egg and vanilla. Continue mixing until no streaks of egg and vanilla remain.

STEP FIVE: Add the flour and mix just until combined. Cover and chill in the refrigerator for 30 minutes.

STEP SIX: Remove the basket from the air fryer. Line with parchment paper or a layer of aluminum foil with an overhang for “handles”. (I chose the foil liner option because parchment paper can bunch while baking the cookies and can warp the cookie shape.) 

OUR RECIPE DEVELOPER SAYS

You can make a few aluminum foil liners with handles to make the baking easier. Simply lift out the foil liner with the baked cookies and replace it with the next pre-made liner.

STEP SEVEN: Preheat the air fryer to 375°F (this should only take 3 to 4 minutes). 

PRO TIP:

Some models of air fryer cannot be set to 375°F, so you can preheat to 370°F.

STEP EIGHT: Use a 1½-tablespoon cookie scoop to scoop the peanut butter cookie dough. Roll the dough into a ball. Roll in ¼ cup granulated sugar. Place the coated cookie dough balls in the lined basket. Use the tines of a fork to make a crisscross pattern on the top of the cookies. 

PRO TIP:

You can coat the fork with the granulated sugar if it sticks to the cookie dough.

STEP NINE: Place the air fryer basket back into the air fryer. Bake for 6 to 7 minutes or until the edges of the cookies are golden brown. Remove the basket from the air fryer. Allow the cookies to rest in the basket for 2 to 3 minutes before transferring the cookies to a cooling rack to completely cool. Repeat for the remaining cookie dough. 

PRO TIP:

Make sure to check your air fryer oven manual for time guidelines for your specific air fryer model, as the cooking time and temperatures vary depending on the type of air fryer you have.
