Ingredients
1¼cupsall-purpose flour
¾teaspoonbaking soda
½cupsalted sweet cream butter,softened
½cupcreamy peanut butter,your favorite brand (I used Reese’s creamy peanut butter)
¾cupgranulated sugar,divided into ½ cup and ¼ cup
½cuplight brown sugar,packed
1largeegg,room temperature
1teaspoonpure vanilla extract
Instructions
Add the flour and baking soda to a small mixing bowl. Whisk to combine. Set it aside.
Using a stand mixer or a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat together the butter and peanut butter for 1 minute.
Add ½ cup each of granulated and brown sugar to the peanut butter mixture. Continue mixing for 1½ to 2 minutes until completely incorporated.
Add the egg and vanilla. Continue mixing until no streaks of egg and vanilla remain.
Add the flour and mix just until combined. Cover and chill in the refrigerator for 30 minutes.
Remove the basket from the air fryer. Line with parchment paper or a layer of aluminum foil with an overhang for “handles”. (I chose the foil liner option because parchment paper can bunch while baking the cookies and can warp the cookie shape.)
Preheat the air fryer to 375°F (this should only take 3 to 4 minutes. Some models of air fryer cannot be set to 375°F, so you can preheat to 370°F).
Use a 1½-tablespoon cookie scoop to scoop the cookie dough. Roll the dough into a ball. Roll in ¼ cup granulated sugar. Place the coated cookie dough in the lined basket. Use a fork to make a crisscross pattern. (You can coat the fork with the granulated sugar if it sticks to the cookie dough.)
Place the basket back into the air fryer. Bake for 6 to 7 minutes or until the edges of the cookies are golden brown. Remove the basket from the air fryer. Allow the cookies to rest in the basket for 2 to 3 minutes before transferring the cookies to a cooling rack to completely cool. Repeat for the remaining cookie dough.
Notes
You can make a few aluminum foil liners with handles to make the baking easier. Simply lift out the foil liner with the baked cookies and replace it with the next pre-made liner.
Some models of air fryer cannot be set to 375°F, so you can preheat to 370°F.
You can coat the fork with the granulated sugar if it sticks to the cookie dough.
