This easy cauliflower fried rice is a great alternative to regular fried rice since cauliflower is vegan, low carb, paleo diet-friendly, keto diet-friendly, and a whole30 food. Fry up this vegetable along with extra veggies and seasonings for a flavorful side dish.

Cauliflower Fried Rice Ingredients

You’ll need:

  • 2 tablespoons olive oil
  • 15-ounce bag of riced cauliflower
  • 10-ounce bag of frozen vegetables
  • 6 eggs
  • salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion salt or onion powder
  • ¼ cup soy sauce

Substitutions And Additions

VEGGIES: In this healthy cauliflower rice stir fry, add bean sprouts, snow peas, garlic cloves, red bell pepper, or green onions for even more delicious vegetables in this already yummy dish.

PROTEIN: Add chicken, pork or ground beef as a great way to include even more protein to your dish and to turn this recipe into a main course option.

GARNISH: A sprinkle of sesame seeds on top of your cauliflower rice will finish off your dish in the perfect way.

COOKING OIL: In place of the olive oil, you could also opt to use sesame oil for frying the rice instead.

How To Make This Cauliflower Fried Rice Recipe

You can’t boil cauliflower rice like you would normal rice. In a cold dish like a salad, you don’t even need to cook it at all. For other dishes, it works best to quickly sauté it.

STEP ONE: Heat your oil in a large skillet or large wok until it’s warm and simmering, then add your raw cauliflower rice and mix. Spread into an even layer and let cook for about 3 to 4 minutes. Stir and let continue cooking for 5 to 6 more minutes until moisture is gone.

PRO TIP:

Don’t sauté it for too long. This will make your cauliflower rice soggy, and nobody wants that.

STEP TWO: Add your veggies and cook through, then make a well in the middle of the pan and add the whisked eggs.

STEP THREE: Scramble the eggs as they cook, then mix them into the rest of the dish. Add your seasonings and give it another stir.

PRO TIP:

Don’t use too much soy sauce. Since cauliflower rice is not a grain, it doesn’t absorb liquids the same way rice does. If you use too much sauce or dressing, it’ll just pool at the bottom. Start with less and work your way up.

How To Serve

This would be a great side dish for when you are looking for something a little different. Serve it with these delicious sweet and sour meatballs or orange chicken for the perfect alternative to takeout.

Storage

IN THE FRIDGE: Try to eat cauliflower rice the same day you make it. Not only does leftover rice start to soften after a few days in the fridge, but it also starts to smell! 

IN THE FREEZER: Unfortunately, like most recipes with frozen veggies, it’s not a great meal to freeze. The main problem is that the reheated version turns out soggy and watery and doesn’t retain the flavors from the spices and soy sauce.

My best suggestion is if you are making your own cauliflower rice, freeze it in an airtight container before it’s cooked. When you want to have cauliflower fried rice for dinner, you just have to toss everything in a pan and sauté it.

Can I freeze cauliflower fried rice?

While we don’t recommend freezing cooked cauliflower rice as it will become soggy once thawed, cauliflower rice freezes well raw. You can add it right to your skillet once you are ready to stir fry the cauliflower for dinner.

    This was very easy and delicious. I added sirachi on top after plating. Next time I will sautรฉ a small onion before I add the cauliflower and add some chicken for protein.
