You’ll need:

  • 6 cups (16 ounces) of broccoli florets, rinsed and trimmed (about 1½ bunches)
  • ⅓ cup of extra virgin olive oil
  • 1½ tablespoons of lemon juice
  • 1 tablespoon of fresh garlic, minced
  • 1 teaspoon of fresh lemon zest
  • 1 teaspoon of onion powder
  • 1 teaspoon of kosher salt
  • ½ teaspoon of fresh cracked black pepper
  • ¼ teaspoon of red pepper flakes
  • ¾ cup of grated parmesan cheese

Parmesan Broccoli Substitutions And Additions

BROCCOLI: You can substitute 3 cups of the fresh broccoli florets for fresh cauliflower or other favorite vegetables that are hearty enough for roasting in this great side dish recipe.

LEMON: You can remove the fresh lemon juice and zest, but adding a little bit of lemon gives even more freshness to the flavor.

How To Roast Broccoli In The Oven

STEP ONE: Preheat the oven to 425°F. Line a large baking sheet with aluminum foil or parchment paper and lightly spray with non-stick spray. Set it aside.

PRO TIP:

Non-stick Reynolds foil is also a good alternative to spraying non-stick spray.

STEP TWO: Using a large bowl, add the broccoli florets, olive oil, lemon juice, minced garlic, lemon zest, onion powder, kosher salt, ground pepper and red pepper flakes.

Toss to coat the broccoli completely.

PRO TIP:

You can use a 2-gallon Ziploc plastic bag instead of a large mixing bowl. Add all ingredients, including the broccoli, to the bag and give it a good shake to coat the broccoli.

STEP THREE: Spread the coated broccoli on the prepared baking sheet in a single layer.

STEP FOUR: Evenly sprinkle the grated parmesan. Bake for 20-25 minutes. Serve while hot.

Serve with lemon wedges so that everyone can add an extra little zing.
