If you haven’t tried roasted broccoli yet or are not a broccoli lover, you’re missing out. Roasting brings out the sweetness in the broccoli and makes it so delicious that you definitely need to give this recipe a try.

Roasted Broccoli Ingredients

You’ll need:

  • 6 cups (16 ounces) broccoli florets, rinsed and trimmed
  • ⅓ cup extra virgin olive oil
  • 1½ tablespoons lemon juice
  • 1 tablespoon fresh garlic, minced
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • ¼ teaspoon red pepper flakes
  • ¾ cup grated parmesan cheese, divided

SUBSTITUTIONS AND ADDITIONS

BROCCOLI: You can substitute 3 cups of the fresh broccoli florets for fresh cauliflower or other favorite vegetables that are hearty enough for roasting in this great side dish recipe.

LEMON: You can remove the fresh lemon juice and zest, but adding a little bit of lemon gives even more freshness to the flavor.

How to Make This Roasted Broccoli Recipe

STEP ONE: Preheat the oven to 425°F. Line a large baking sheet with aluminum foil and lightly spray with non-stick spray. Set it aside.

PRO TIP:

Non-stick Reynolds foil is also a good alternative to spraying non-stick spray.

STEP TWO: Using a large bowl, add the broccoli florets, olive oil, lemon juice, minced garlic lemon zest, onion powder, kosher salt, ground pepper and red pepper flakes. Toss to coat the broccoli completely.

PRO TIP:

You can use a 2-gallon Ziploc plastic bag instead of a large mixing bowl. Add all ingredients, including the broccoli, to the bag and give it a good shake to coat the broccoli.

STEP THREE: Spread the coated broccoli on the prepared baking sheet in a single layer.

STEP FOUR: Evenly sprinkle the grated parmesan. Bake for 25 minutes. Serve while hot. Serve with lemon wedges so that everyone can add an extra little zing.

How to Serve

This easy roasted broccoli recipe is the perfect simple side dish. You can serve it alone or alongside our easy recipes for roasted potatoes or even french fries. Our chicken Marsala or grilled salmon would be great options for the main dish.

Storage

IN THE FRIDGE: Store any leftovers of this parmesan broccoli in an airtight container in the refrigerator for up to 2 days.

IN THE FREEZER: You can freeze oven-roasted broccoli in an airtight container for up to 6 months.

Can I use frozen broccoli?

You can use frozen broccoli for roasting. The edges won’t come out quite as crisp as fresh broccoli, but the dish will still be delicious.

Can I roast broccoli mixed with other vegetables?

You can roast broccoli along with other veggies, although you have to be aware that different vegetables have different roasting times. So you may need to add the broccoli near the end of the roasting time if you are cooking potatoes or carrots too.

Can I freeze roasted broccoli leftovers?

Roasted broccoli will keep in the freezer for up to 6 months stored in an airtight container.
