While we made from-scratch Starbucks Pumpkin Loaf earlier this season, let’s be honest – sometimes a 2- or 3-ingredient recipe with kids is more than enough! I can’t tell you how many times we’ve left out an ingredient in more complicated recipes because there was some disagreement over who stirred longer or who added which ingredient last time, etc.

I love making muffins with the kids, too – because unlike cookies, you can leave a few lumps in the muffin batter and they will still turn out delicious and perfect.

  • 15 oz can pumpkin puree
  • 1 box Spice Cake Mix
  • Additional pumpkin spice or cinnamon, optional


  1. Preheat your oven to 350F
  2. Have your helpers dump the cake mix and pumpkin puree into a BIG bowl. (The bigger bowl, the less spills will come over the sides!)Preheat your oven to 350F

  4. Have them stir the muffin batter to their hearts content! A few dry spots or lumps are not a big deal, but still try to get the batter as even-looking as possible.
  5. (Another thing to love about this recipe – no need for a mixer!)
  6. Using a 1/2 cup measuring cup, portion the pumpkin spice muffin batter into a pre-lined jumbo muffin pan.
  7. Bake for 18-25 minutes (depending on how big your muffins are) until an inserted toothpick comes out clean.
  8. Cool on a cooling rack, and then enjoy!
