Ingredients
  

  • 4 large eggs
  • ¼ cup milk
  • ½ teaspoon table salt
  • ¼ teaspoon black pepper
  • ¼ cup diced bell peppers your choice of color; I chose a combination of red and green
  • ¼ cup diced onions
  • ¼ cup diced cooked bacon or sausage cooked and crumbled -or- diced ham
  • ¼ cup freshly shredded mild cheddar cheese you can substitute sharp cheddar, Monterey jack cheese, or even shredded pepper jack cheese

Instructions
 

  • Preheat your oven to 350°F (175°C). Spray a donut-shaped muffin tin with cooking spray.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • Distribute the diced bell peppers, onions, and meat evenly into the muffin cups.
  • Pour the egg mixture into each muffin cup, filling them about ⅔- ¾ full.
  • Sprinkle shredded cheddar cheese on top of each cup.
  • Bake for 20-25 minutes or until the omelet bites are set and slightly golden.
  • Allow them to cool for a few minutes. Gently use a butter knife to remove the omelet bites from the muffin tin.

Notes

  • Be sure to take time to measure out your ingredients and chop up your peppers before you begin. You should also crumble your bacon or sausage, or chop your ham into small chunks.
  • If the omelet breakfast bites don’t easily flip out, use a plastic fork to gently loosen any stuck omelets from the donut pan. A plastic fork bends, so it does less damage to your egg bites, and it shouldn’t scratch your pan.
