Buffalo Chicken Fries Ingredients
You’ll need:
- 26-ounce package frozen french fries
- 16-ounce package grilled chicken strips/pieces
- 1 cup buffalo hot sauce
- 1½ cups grated pepper jack cheese
- 1½ cups grated Monterey jack cheese
- 1 cup ranch dressing
- ½ cup blue cheese crumbles
- ½ to 1 cup sliced green onions
PRO TIP:
It is best to grate the cheese from a block. Shredded cheeses that you buy in the grocery store tend to have a coating that means that it doesn’t melt quite as well.
SUBSTITUTIONS AND ADDITIONS
CHEESE: We used pepper jack and Monterey jack, but you can use any combination of your favorite melting cheeses – cheddar cheese or Colby-jack would also be great.
FRIES: Plain straight fries, crinkle-cut fries, or waffle fries would all work fine for these loaded buffalo fries. Even sweet potato fries could be used for a different spin on this yummy recipe.
BUFFALO SAUCE: Store-bought is easy and convenient but if you have a recipe for your own buffalo sauce, you can certainly use that in this tasty recipe.
CHICKEN: There are plenty of options for the chicken you use in this recipe. Leftover chicken, chicken tenders, or shredded chicken breast would all work mixed into the buffalo sauce.
BLUE CHEESE: If you love blue cheese, consider using blue cheese dressing instead of the ranch dressing as a drizzle. For crowds, the ranch dressing may be more universally appealing. You can even serve the blue cheese crumbles on the side.
How To Make This Buffalo Chicken Fries Recipe

If you’re serving a crowd, this recipe easily doubles or triples.
STEP ONE: Preheat oven to 450°F.
STEP TWO: Place fries onto a sheet pan in a single layer and bake according to package instructions. I like to bake an additional 5 to 10 minutes beyond the recommended bake time so that the fries are crispier.
STEP THREE: While the fries are cooking, chop the cooked chicken into bite-size pieces and toss chicken pieces with about ½ cup of buffalo sauce.
STEP FOUR: Remove the cooked fries from the oven when they are golden and crispy. Sprinkle with half of the cheese, then the buffalo chicken mixture, and then the remaining cheeses.
STEP FIVE: Return the sheet pan to the oven for an additional 5 minutes or until the cheeses are melted and the chicken is hot.
STEP SIX: Drizzle fries with buffalo sauce and ranch dressing (adjust the amount to your taste).
STEP SEVEN: Sprinkle with blue cheese crumbles and sliced green onions and serve immediately.

Green onions or fresh chives are a great garnish for color and a little fresh onion flavor.
