Ingredients
26ouncesfrozen french fries
16ouncesgrilled chicken strips or pieces
1cupbuffalo hot sauce
1½cupsgrated pepper jack cheese
1½cupsgrated Monterey jack cheese
1cupranch dressing
½cupblue cheese crumbles
½ to 1cupsliced green onions
Instructions
Preheat oven to 450°F.
Spread the french fries onto a sheet pan and bake according to the package instructions. I like to bake an additional 5 to 10 minutes beyond the recommended bake time so that the fries are crispier.
While the fries are cooking, chop chicken into bite-size pieces and toss with about ½ cup of buffalo sauce.
Remove the cooked fries from the oven when they are golden and crispy. Sprinkle with half of the cheese, then the chicken pieces, and then the remaining cheeses.
Return the sheet pan to the oven for an additional 5 minutes or until the cheeses are melted and the chicken is hot.
Drizzle the fries with buffalo sauce and ranch dressing (adjust the amount to your taste).
Sprinkle with blue cheese crumbles and sliced green onions and serve immediately.
Notes
It is best to grate the cheese from a block. Shredded cheeses that you buy in the grocery store tend to have a coating that means that it doesn’t melt quite as well.
If you’re serving a crowd, this recipe easily doubles or triples.
Green onions or fresh chives are a great garnish for color and a little fresh onion flavor.
