If you’re a fan of rich, gooey cheese that practically melts in your mouth, then white queso dip is a must-try.

With its smooth texture and subtle blend of spices, it’s the perfect indulgence for anyone who loves to savor their snacks.

You’ll need:

  • 1 pound of white American cheese
  • ½ cup of milk
  • 4-ounce can of green chilies
  • 1 teaspoon of taco seasoning

Substitutions And Additions

CHEESE: I used sliced cheese, but you can also cube a block of cheese if you’d rather. If you’d like to mix in other kinds of cheese for even more texture and cheesy goodness, try pepper jack, Monterey jack, or mozzarella.

MEAT: For a heartier dip recipe, add half a pound of cooked ground beef or chorizo to your creamy white queso dip. You can also add half a cup of crispy, cooked, and crumbled bacon on top before serving.

BEANS: If you’re looking for added texture, add a cup of black or pinto beans, or serve alongside yummy refried beans. 

GARNISH: You can top your homemade white queso dip with fresh tomatoes, green onions, jalapeños, and cilantro.

PICO DE GALLO: Add a little Pico de Gallo on top of your white queso dip for a truly irresistible taste. All you need is 2 diced Roma tomatoes, ¼ cup chopped onion, ¼ cup chopped cilantro, and 1 tablespoon lime juice. Mix all the ingredients together and use as topping for the dip or to serve on its own.

How To Make This White Queso Dip Recipe

All the cheesy goodness of this dip comes together on the stovetop. You will mix all the ingredients until everything is smooth and combined and ready to serve.

As you add in the cheese to melt, be sure to whisk constantly to make sure it stays creamy and melts perfectly.

STEP ONE: Place the cheese and the milk in a medium-sized saucepan over medium-low heat and stir until the cheese has melted.

PRO TIP:

Once the milk reaches a light simmer, immediately reduce it to low. Never turn the heat higher than medium/low past that point.

STEP TWO: Remove from heat and add the green chiles and taco seasoning and mix together. If you’re serving at a party, I would suggest keeping it warm in a slow cooker on low.

PRO TIP:

If your cheese dip is too thin, you can add in a tablespoon of cornstarch to help thicken it up. If your cheese dip is too thick, add a little chicken broth to help thin it out.

IN THE FRIDGE: If you have any leftover Mexican queso dip, pour it into an airtight container and store it in the refrigerator for up to 3 to 4 days.

REHEATING: Add a bit of additional milk and heat in the microwave in 15 to 30-second increments, stirring between each increment to make sure it’s fully heated through.

IN THE FREEZER: We don’t recommend freezing this queso dip as it will change the creamy texture and make it watery.
