Here’s how to make a really good graham cracker crust – buttery, firm, and never falling apart on you.

  1. Start by crushing the graham crackers into fine, even crumbs. A food processor makes quick work of this, but no food processor? No worries. Just pop the crackers in a ziplock bag and crush them with a rolling pin.

  2. Once you have your crumbs, mix them with melted butter The trick here? Make sure the butter is evenly mixed in, so the crust holds together well when pressed. And here’s the important bit: don’t go overboard with the butter! Too much, and you’ll get a greasy, crumbly mess.


  3. Transfer the mixture to your pan and grab a measuring cup or glass. Use the bottom of a measuring cup or a glass to firmly and evenly press the crumbs into the bottom and up the sides of the pan. Applying firm pressure is key – this helps create a crust that won’t fall apart when you slice into it later.

Troubleshooting Your Graham Cracker Crust

The crust is falling apart
This usually means there’s not enough butter to bind the crumbs together or they weren’t packed down firmly enough. Double-check that you’ve used the right amount of melted butter and press that mixture down firmly with the bottom of a measuring cup or glass. Light but firm pressure is the goal.

The crust is too greasy
You’ve probably added too much butter. Next time, stick to the recipe measurements and mix the butter in slowly – you want the crumbs just moist enough to hold together, not swimming in butter.

Ingredients
  

  • 9 graham cracker sheets, one sleeve
  • ½ cup melted butter
  • 1 tablespoon sugar
  • 16 ounces cream cheese, softened
  • 8 ounces Cool Whip
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice
  • 21 ounces cherry pie filling

Instructions
 

  • Place graham crackers in the food processor and pulse into fine crumbs.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and sugar.
  • Line 8×8 pan with parchment paper. Press the graham cracker mixture evenly into the bottom of the pan. Chill in the refrigerator.
  • In a large bowl, mix softened cream cheese, Cool Whip, powdered sugar, and lemon juice until smooth. Spread into an even layer over the graham cracker crust. Chill for about 5 minutes.
  • Spoon cherry pie filling over the cream cheese layer. Gently spread out the cherries to cover the entire pan.

      I have not tried it that way, so I don’t know if it will change the texture/consistency at all! I would assume if the substitute is supposed to be just like regular sugar, you should be fine.

        Hi, Meagen – we make this in a square dish and the crust at the store will be round. We haven’t tested this recipe using the pre-made round crust so I’m not sure if any adjustments would need to be made.

    I have always loved cheesecake. I actually have tried it with a almond crust before. But only because my husband is a diabetic. It doesn’t change the flavor any. But when it comes to toppings, I have 3 favorites. 1- original New York style, 2- raspberry flavored topping or 3- strawberry flavored topping. I never put whipped cream on it.     I like to use a ground chocolate cookie crumb for the bottom base of a Cheesecake. Canned cherry filling or strawberry filling is used for my topping to make a knock off of a black forest cheese cake. No other toppings or whipped cream. No Bake is the way to go, it’s quick, simple and ready in no time. And, there is no left overs when this is served to my friends.

    I haven’t made this because, it looks delicious but, I haven’t figured out how to make it without dairy! The gluten items, I have workable subs for. Gluten free pie filling, got that covered, too! Whipped cream can be replaced with whipped coconut cream. But cream cheese has me stumped! Any suggestions?

    I like a graham cracker crust. I prefer to eat the no- bake style cheesecake because it is lighter. Traditional cheesecake is heavy and harder to bake.     I love making no bake cheesecakes. They really take no time at all to make and they are so delicious. I love the graham cracker crust and the smooth, creamy filling. I love cherries or blackberries on top of my no bake cheesecake.

    I haven’t made this cheesecake but it sounds great! I prefer no bake cheesecake with graham cracker crust and cherries on top or my homemade pumpkin butter drizzled on top. 👍🏻👍🏻

    I got sidetracked, and accidentally used granulated sugar instead of powdered. It was a HUGE hit!! If you don’t have powdered sugar, I suggest using regular sugar… it is now a required dessert at Friendsgiving 🥰.
    Note: next year I will double the recipe, and use half powdered and half granulated… I’ll keep you posted!
