You’ll need:

  • ½ cup of fresh-squeezed lime juice (about 4 limes)
  • 1 cup of orange juice (pulp-free)
  • ½ cup of white tequila
  • 3 tablespoons of simple syrup
  • 3-4 additional limes, sliced into rounds
  • 8 (3-ounce) Dixie cups or similar 
  • 8 popsicle sticks
  • Coarse salt

PRO TIP:

Use plastic-lined paper cups to easily remove the popsicle once it’s frozen.

Substitutions And Additions For This Margarita Ice Pops Recipe

LIME JUICE: Try to use freshly-squeezed lime juice rather than bottled lime juice, as tastes so much better. In a pinch, you can use bottled lime juice if you need to.

POPSICLE STICKS: If you don’t have wooden popsicle sticks on hand, you could use straws or bamboo skewers cut down to size.

SIMPLE SYRUP: I like to keep a bottle of simple syrup stocked in my pantry. You can find this at all liquor or grocery stores. It is great to keep on hand for all types of cocktails.

You can make your own:

  1. Combine equal parts (½ cup each) of granulated sugar and water
  2. Heat it in a small saucepan on medium heat just until the sugar dissolves. You do not want to boil the simple syrup.
  3. Allow it to cool
  4. Store it in the refrigerator in a lidded jar for up to two weeks.

STEP ONE: In a 4-cup measuring cup with a spout, combine fresh lime juice, orange juice, tequila, and simple syrup. Stir to combine. Taste and adjust sweetness as needed.

Roll limes on the countertop under your palm before juicing to make them easier to juice.

STEP TWO: Pour the margarita liquid into the little cups, leaving about ¼-inch space at the top of the cup.

STEP THREE: Slice the limes into rounds. You can get about 3 large rounds from each lime, and you want them to be large enough in diameter to fill most of the top of the cup.

STEP FOUR: Cut a tiny slice in the center of each lime round and insert a popsicle stick.

STEP FIVE: Place the popsicle stick and lime into each cup, adjusting the position of the lime slice on the wooden stick so that it rests at the top of the margarita liquid and the popsicle stick stands upright.

STEP SIX: Freeze for 8 hours or overnight.

STEP SEVEN: Loosen the popsicle from the cup by warming the outside of the cup with your hand. This should only take a few seconds. Then gently pull the frozen popsicle free.

Sprinkle the top of the lime with salt and/or dip the bottom of the popsicle into a little bowl of salt.
