The magic of our butterscotch blondies lies in the simplicity of its ingredients. Made with basic pantry staples, these bars are easy to whip anytime the craving strikes.

Adding the butterscotch chips gives the bars a distinctive, rich flavor that makes these blondies truly special.

Here are the ingredients you’ll need:

  • ½ cup of unsalted butter, melted
  • ½ cup of granulated sugar
  • ¾ cup of packed, light brown sugar
  • 2 teaspoons of vanilla extract
  • 2 large eggs, room temperature
  • ¼ teaspoon of salt
  • 1 cup of all-purpose flour
  • ½ teaspoon of baking powder
  • 1 cup of butterscotch chips

Substitutions And Additions

SUGAR: You can replace granulated sugar with coconut sugar.

It has a similar sweetness level and a slightly caramel-like flavor that works well with the butterscotch.

EGGS: If you’re vegan or allergic to eggs, you can use a flax egg as a substitute.

To do this, combine one tablespoon of ground flaxseed mixed with 2½ tablespoons of water.

This will slightly alter the texture of the blondies, making them a bit denser.

BUTTERSCOTCH CHIPS: You can substitute the butterscotch chips with chocolate chips, white chocolate chips, or even chopped nuts for a different flavor profile.

How To Make This Butterscotch Blondies Recipe

Making butterscotch blondies is a straightforward process that involves mixing the ingredients in the right order and baking them to perfection.

Here’s how to do it:

OUR RECIPE DEVELOPER SAYS

Before starting this recipe, ensure your eggs are at room temperature, and your butter is melted.

STEP ONE: Preheat the oven to 350°F. Line an 8×8 glass baking dish with parchment paper and set it aside.

STEP TWO: Combine the melted butter, granulated sugar, and brown sugar in a large mixing bowl.

Whisk together until the mixture pulls away from the sides of the bowl, looking smooth.

STEP THREE: Add the vanilla extract and eggs and whisk in until fully combined.

STEP FOUR: Add the salt, flour, and baking powder to the butter/egg mixture and stir just until incorporated.

PRO TIP:

Be careful not to overmix the batter, which can lead to tough and denser blondies.

STEP FIVE: Fold in the butterscotch chips until they are evenly distributed throughout the batter.

STEP SIX: Spread the batter evenly into the prepared baking dish.

STEP SEVEN: Bake blondies for 35 to 40 minutes or until they are golden brown across the top and a knife inserted in the center comes out with a few moist crumbs.

PRO TIP:

The blondies will continue baking in the warm pan, so go ahead and pull them out of the oven when the top is golden brown.

A knife inserted in the center may come out with some moist crumbs. These blondies are best, just slightly underbaked.

Storage

Butterscotch blondies are not only delicious when fresh, but they also store well, making them a great make-ahead dessert option.

MAKE AHEAD: You can prepare the blondie batter a day ahead and store it in the refrigerator.

When you’re ready to bake, let the batter come to room temperature, then spread it in the baking dish and bake as directed.

IN THE FRIDGE: Once baked and cooled, the blondies can be stored in an airtight container on the countertop for three to five days.

They will retain their freshness and flavor during this time.

REHEATING: When you’re ready to enjoy a frozen blondie, let it thaw at room temperature.

If you prefer it warm, you can heat it in the microwave for a few seconds until it’s just warm to the touch.

Frequently Asked Questions

Can I use dark brown sugar instead of light brown sugar?

Yes, you can. Dark brown sugar has a deeper, more caramel-like flavor due to its higher molasses content. It will give the blondies a richer flavor.

Can I add nuts to this simple recipe?

Absolutely! Adding nuts like walnuts or pecans can add a nice crunch and additional flavor to the blondies.

Can I use a 9×9 baking dish instead of an 8×8?

Yes, but keep in mind that using a larger baking dish will result in thinner blondies and a shorter baking time.

How do I know when the blondies are done?

The blondies are done when they are golden brown across the top, and a knife inserted in the center comes out with a few moist crumbs.

Can I double this blondie dessert bar recipe?

Yes, you can double the recipe. Just make sure to adjust the baking time accordingly and use a larger baking dish.
