Pineapple rum punch is the ultimate drink that packs a punch with every sip.

This concoction is a perfect blend of juicy pineapples, tangy lime juice, and a generous amount of rum.

You’ll need:

  • ¾ cup of pineapple juice
  • ⅓ cup of coconut rum
  • ½ cup of lemon-lime soda
  • ⅛ cup of fresh lime juice
  • ⅛ cup of simple syrup
  • Fresh pineapple skewer and ice cubes, for garnish

PRO TIP:

I like to get the little mini (six-ounce) cans of pineapple juice to keep on hand in my pantry.

These are great for this recipe since six ounces is equivalent to three-quarters of a cup, and they come in a four or six-pack.

This way, I do not need to open a large bottle of pineapple juice if I am only using it to make a couple of cocktails.

Substitutions And Additions

RUM: If you do not like the flavor of coconut, you can substitute a white rum, dark rum, or even a spiced rum in this pineapple rum punch drink.

I really think that the coconut rum and the pineapple juice blend beautifully together and make a lovely summertime cocktail, but the substitutes work well too.

PINEAPPLE JUICE: If you don’t have pineapple juice on hand or prefer a different fruit flavor, consider using orange juice or a blend of fruit juices like mango and passion fruit.

SODA: You can easily swap out the lemon-lime soda for ginger ale, club soda, or lemon-lime sparkling water in this drink recipe.

SIMPLE SYRUP: I like to keep a bottle of simple syrup stocked in my pantry. You can find this at most liquor or grocery stores.

It is great to keep on hand for all types of cocktails. You can make your own by combining equal parts – a half cup of each – of granulated sugar and water.

You will heat it in a small saucepan on medium heat just until the sugar dissolves. You do not want to boil the simple syrup.

Allow it to cool, then store it in the refrigerator in a lidded jar for up to two weeks.

GARNISH: To make this easy cocktail even more tropical, add maraschino cherries to the skewer and orange slices to the side of the glass.

A drink umbrella is always a cheery addition too.

ICE CUBES: Add another layer of tasty fruit by making ice cubes out of orange juice so that when they melt, they don’t water down your drink but rather add more fresh flavor.

STEP TWO: Fill two (12-ounce) low-ball cocktail glasses three-quarters full with ice cubes.

PRO TIP:

If you are making a large batch, you can pour all of your ingredients into a large pitcher or even a punch bowl instead of individual glasses.

Troubleshooting This Recipe

The drink is too weak or watery

Solution: If your punch tastes too weak or watery, it could be due to too much ice melting or not enough flavor concentration.

Add more pineapple juice or rum to strengthen the flavors. You can also add a bit more sugar or a splash of citrus juice to enhance the overall taste.

The drink is too sweet

Solution: If your punch is overly sweet, it might not be to everyone’s liking.

Balance the sweetness by adding more pineapple juice or rum to dilute it.

You can also try squeezing fresh lime or lemon juice into the punch to counteract the sweetness with some acidity.

The drink has too strong of an alcoholic flavor

Solution: If the rum taste is too overpowering, it can be unpleasant for some.

To mellow the alcohol flavor, add more pineapple juice to the mix. You can also add a splash of soda water for a lighter touch.

How To Serve This Rum Punch Cocktail

SERVE WITH APPETIZERS: Serve this rum and pineapple cocktail as a party punch, along with appetizers such as fruit salsa with cinnamon chips or tortilla chips and tomato salsa.
