Table of Contents
Fluffy and sweet, this pistachio salad is always a crowd-pleaser, and it’s crazy simple to make. Creamy pudding is blended with whipped cream, pineapple, and crunchy coconut to make a dessert salad with hints of tropical flavors.
Pistachio Salad Ingredients
You’ll need:
- 20-ounce can of crushed pineapple
- 2 (3.4-ounce) boxes of instant pistachio pudding mix
- 1 cup of shredded coconut
- 12 ounces Cool Whip whipped topping
- Chopped pistachios and maraschino cherries for garnish
SUBSTITUTIONS AND ADDITIONS
MIX-INS: Sometimes, I like to add white miniature marshmallows (or rainbow mini marshmallows) to my pistachio pudding salad as well. You can also add mandarin oranges to the fruit mix.
NUTS: If your family doesn’t like pistachio nuts, they can be left off the top of this salad. You could also replace them with walnuts, slivered almonds, or another nut, depending on your preference.
WHIPPED TOPPING: If you would prefer to use homemade whipped cream in this easy fruit salad, check out our recipe here.
FRUIT: For even more fruity variety, you could add a can of fruit cocktail to your salad.
CREAM CHEESE: For a thicker dressing, you could mix in cream cheese with the Cool Whip in this green ambrosia salad.
How To Make This Pistachio Salad Recipe
STEP ONE: In a large mixing bowl, mix the pineapple and instant pudding mix until the mix has completely dissolved and the pineapple is thick.
PRO TIP:
You can use the pineapple juice to dissolve the pudding mix.
STEP TWO: Stir in the coconut and whipped topping with the pudding mixture.
PRO TIP:
Stir all of the ingredients together carefully as you don’t want to break apart the pineapple pieces.
STEP THREE: Transfer to serving bowl and top with chopped pistachios and cherries.
PRO TIP:
If you have the time, allow this pistachio fruit salad to chill for several hours in the fridge. This will allow the flavors to mingle together in your salad.
How To Serve
Serve your green fluff salad as a side dish or for a creamy dessert. Part of the appeal of this fun dessert is the bright green color. Whip up this easy recipe for St. Patrick’s day or during the holiday season for a festive treat. What about renaming it for Halloween as a Frankenstein salad? Kids would love the bright colors!
This dish reminds me of ambrosia salad, which is another family favorite that we love. Our Watergate salad recipe is also a simple pudding salad that is a popular choice.

Storage
IN THE FRIDGE: If you don’t eat all the creamy fruit salad in one serving, just scoop into an airtight container and store it in the fridge. It’ll last for a few days.
IN THE FREEZER: We do not recommend freezing this easy dessert. The creamy dressing won’t do very well in the freezer.
Just a few simple ingredients and you can whip up this pistachio fluff salad in a flash. It’ll only take you moments to prepare, it looks pretty, it transports easily, and it’s delicious!
