Ingredients

  • 1 pound lean ground turkey
  • ½ pound Italian turkey sausage 2 ½ links
  • 1 small onion diced
  • ½ cup diced baby bella mushrooms
  • 1 jar marinara sauce
  • 1 can spinach rinsed and drained
  • 1 egg
  • ½ cup grated parmesan cheese
  • 4 cups Horizon Shredded Mozzarella
  • 1 heaping cup Horizon Cottage Cheese
  • 1 box oven ready lasagna noodles

Instructions

  • In a skillet, saute onions for 1-2 minutes then add in mushrooms. Cook for another 1-2 minutes.
  • Remove sausage from casings and add into the pan along with the ground turkey.
  • Cook for 5-7 minutes until the turkey is fully cooked. Spread about half cup of pasta sauce in the bottom of a 9×13 baking dish then pour the rest into the meat.
  • In a separate bowl, mix together the spinach, cottage cheese, egg, parmesan and one cup of mozzarella.
  • Add a layer of lasagna noodles on top of the sauce in the baking dish. Layer with 1/3 of the meat mixture, then top with the cottage cheese mixture. Place another layer of lasagna noodles on top and continue layering.
  • Spread the remaining cheese, about 3 cups, over the top of the lasagna. Cover and bake at 375 for 35 minutes. Then uncover and cook for another 15-20 or until golden brown. Garnish with fresh parsley.
