These days, life is beyond busy — I bet you can relate!

Now that school is back in session, we are constantly hurrying from one thing to the next.

Each of my three boys is in a different building this year, which means I’m extra busy making sure that everyone gets where they need to be on time each day.

Our days kind of feel like a choreographed dance: one step missed and our whole schedule might get a little goofy.

Needless to stay, I do my best to keep all the moves going and getting everything accomplished that we need to!

Of course, just because school and work are busy doesn’t stop the fact that everyone needs to eat. At least three times a day.

Which is actually way more than that because my boys love food. Must take after their mama. 😉

I think they might be part Hobbit in fact: there are multiple meals each day, including at least two dinners.

Even as I sit writing this, my youngest came up to me, with big, brown eyes and told me he was hungry and asked if he could he please have something to eat?

Poor love.

He doesn’t know I have an amazing dinner up my sleeve: Instant Pot Pot Roast.

And not just any old Instant Pot roast… it’s the maiden meal in my brand new, gorgeous Instant Pot by The Pioneer Woman that I picked up at Walmart.

Let me tell you: I love The Pioneer Woman and all her amazing products, which are only available at Walmart.

Years and years ago, when I first started blogging, I made it a point to read Ree Drummond’s blog each day. I adored her. I loved her story telling style, her humor, all her recipes and the whole life she had created for her family.

Fast forward to the first blogging event I attended and none other than The Pioneer Woman was the keynote speaker. I nearly died of joy.

When she started creating products, I quickly began snagging them up, one on each trip to Walmart. (See, I was trying to be responsible and pace myself!)

I’m quite certain I need all the Pioneer Woman things.

It’s a hugely versatile appliance: it works as a pressure cooker, slow cooker, rice cooker, steamer, sauté/browning and warmer.

Recipe for Instant Pot Pot Roast

Ingredients for Instant Pot Pot Roast

Let’s gather what you need for dinner:

  • 3 pounds chuck roast
  • salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 ½ cups hot water
  • 2 teaspoons beef bouillon base
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 5 large carrots, cut into large chunks
  • 6 golden potatoes, cut into 12 pieces (cut each potato in half, then each half into 6 pieces)
  • 1 large sweet onion, cut into large chunks
  • 1 bunch of fresh rosemary
  • 1 bunch fresh thyme

How to Make an Instant Pot Pot Roast

In your Instant Pot, pour olive oil and butter. Press the Sauté button, then Adjust until the red illuminated lights says MORE.

Generously salt and pepper both sides of the roast.

When the Instant Pot is hot and the butter is melted, place the roast in the Instant Pot and brown on both sides (about 5 minutes each side).

Dissolve beef bouillon base in hot water.

Remove from Instant Pot. Sprinkle flour on the bottom of the pot and whisk.  Slowly pour in the beef broth, red wine and tomato paste.  Whisk until the mixture thickens, about 30 seconds.

Place the roast back into the pot and cover with rosemary and thyme.

Turn the Instant Pot off and place the lid on the Instant Pot (you may have to wait for it to cool slightly).

How Long to Cook an Instant Pot Pot Roast

Turn the vent to “sealing” and press Manual and set the time to 45 minutes.

When the timer goes off, do a quick release to release the pressure by carefully moving the vent to “venting” and let the steam release. When the steam releases, carefully remove the lid and remove the rosemary and thyme and then add the potatoes, carrots and onions.

Put the lid back on, turn the vent to “sealing”. Press Manual and set the time to 10 minutes.

When the timer goes off, quickly release the steam. Carefully remove the lid and scoop out the potatoes, onions and carrots onto a serving platter.  Place the roast on top.  Strain and reserve the liquid for serving.

What to Serve with Instant Pot Pot Roast

Of course, you’ll have potatoes and carrots with your roast.

I like to also make a simple side salad and have a loaf of warm, crusty bread and butter to go along with the roast.

It reminds me of yummy and hearty meals that my Nannie would make when I was growing up.
