For The Dressing:
- 3 tablespoons of extra virgin olive oil
- 1½ tablespoons of fresh lime juice
For The Salad:
- 4 cups of cubed seedless watermelon
- 1½ cups (1 medium) of cubed seedless English cucumber
- ½ cup of crumbled feta cheese
- ⅓ cup of chopped or torn fresh mint leaves

If you are selecting a pre-cut watermelon, be sure to choose a good watermelon that is not too “grainy” in appearance.
Substitutions And Additions
NUTS/SEEDS: Walnuts, cashews, or sunflower seeds can add a nice extra crunch to your salad.
SALT: You can add ½ teaspoon of kosher or flaky sea salt, but the feta and the lime juice should add the right amount of saltiness.
BLUEBERRIES: I have had similar salads with these exact ingredients, except the watermelon was replaced with blueberries, and they are delicious! You could change up the fruit or add blueberries as well as watermelon. I also imagine strawberries would taste yummy in the salad as well.
MINT: If you are not a fan of mint, you could substitute it with fresh basil or other fresh herbs that you like. It will give the salad a slightly different flavor, but it will be just as tasty.
ONION: Adding a little bit of red onion to the salad would give it a bit of a tangy flavor!
