There’s a little bit of magic in our bright and colorful unicorn cheesecake bites. These little guys are a colorful and fun treat made with delicious, creamy cheesecake and funfetti strawberry centers and are coated with a sweet chocolate coating.

You’ll need:

  • 1 (15.25-ounce) box of funfetti strawberry cake mix with candy bits (unicorn cake mix)
  • 1 (8-ounce) package of cream cheese, softened
  • 3 tablespoons of unicorn sprinkles (or multi-colored sprinkles)
  • 1 cup of pink candy melts
  • 1 cup of purple candy melts
  • 1 cup of blue candy melts
  • 1 cup of yellow candy melts 
  • ⅓ cup of unicorn sprinkles (optional)

Substitutions And Additions

SPRINKLES: You can substitute colorful sprinkles instead of unicorn sprinkles for the tops of the coated cheesecake bites.

How To Make This Unicorn Cheesecake Bites Recipe

STEP ONE: It is important to heat treat the dry cake mix before adding it to the cream cheese. Add the dry cake mix to a medium-sized heat-safe bowl.

Microwave the dry cake mix in two 30-second intervals, stirring after each interval. Allow the cake mix to cool completely before mixing into the cream cheese.

STEP TWO: Using a medium bowl and a hand mixer on medium-high speed, beat the softened cream cheese for 1½ to 2 minutes until completely smooth.

Make sure the cream cheese is at room temperature to avoid lumps in the cheesecake mixture.

STEP THREE: Sprinkle the completely cooled dry cake mix and 3 tablespoons of sprinkles over the top of the cream cheese mixture.

Continue mixing just until well incorporated.

STEP FOUR: Tightly cover the cheesecake mixture with plastic wrap and chill in the refrigerator for 2 hours.

STEP FIVE: Line a baking sheet with parchment paper and set it aside.

STEP SIX: Use a 1-tablespoon cookie scoop, and scoop the cheesecake dough. Roll the dough into a ball in the palm of your hand and place it on the prepared baking sheet.

PRO TIP:

You can allow the uncoated cheesecake bites to sit overnight in the refrigerator before the next step.

Be sure to pull them out and let them come to room temperature slightly because the cake mix may expand, and the coating may crack if you coat the bites too soon.

STEP SEVEN: Using 4 small bowls, add one color of candy melts into each bowl.

Microwave in 30-second intervals, stirring well after each interval, until completely melted. You will be able to roll seven cheesecake bites in each different color.

STEP EIGHT: Roll one cheesecake bite in one of the colors. Place the coated bite onto a fork and gently tap any excess coating off.

You can use a spoon to pour the coating over any bare spots. You can use a toothpick to gently push the coated cheesecake bites onto the prepared baking sheet. 

PRO TIP:

If the coating becomes too thick, you can reheat it in the microwave for 15-second intervals, stirring well after each interval until smooth.

STEP NINE: While the cheesecake bite is still “wet”, sprinkle the unicorn sprinkles over the top of the coated bites.

Repeat the coating and sprinkling process until all the bites are coated. Allow the coating to harden completely before serving.
