You’ll need:

  • 2 (3.4-ounce) boxes of vanilla pudding
  • 2 cups of milk
  • 1 cup of whipped heavy cream (½ cup liquid will yield 1 cup whipped)
  • 1 box of vanilla wafer cookies

For The Topping:

  • 1 cup of chocolate chips

Substitutions And Additions

WHIPPED CREAM: You can swap the whipped heavy cream for Cool Whip or homemade whipped topping.

PUDDING: You can use any flavor of instant pudding to change it up. Banana flavor always goes well with chocolate. 

COOKIES: Instead of using vanilla wafers for your eclair cookies, you could also use graham crackers or cookie thins for a crunchier texture.

CHOCOLATE CHIPS: Don’t be afraid to experiment with different types of chocolate chips. Dark chocolate, milk chocolate, or even white chocolate chips can be used instead of semi-sweet chocolate chips to create a unique flavor profile.

You could also consider using flavored chips like mint or butterscotch to add an extra layer of complexity to your eclair cookies.

How To Make This Eclair Cookies Recipe

This easy no-bake recipe will give you the same great flavors as a luxurious eclair without turning on your oven.

Once you whip up the pudding mixture, all you have to do is top the wafer with the creamy pudding and dip it into the melted chocolate chips.

STEP ONE: In a large bowl, whisk together the vanilla pudding and two cups of milk until smooth. It will be very thick.

STEP TWO: Mix in the whipped heavy cream and place the mixture into the fridge for ten minutes to chill.

STEP THREE: Lay half the vanilla wafers out with the flat side up on a wire rack. Spoon 1 tablespoon of the pudding mixture onto the wafers. Place the other half of the vanilla wafers on top.

STEP FOUR: Place the chocolate chips into a bowl and heat in 30-second intervals in the microwave until they are melted and smooth.

PRO TIP:

For a stronger chocolate flavor, add a teaspoon of cocoa powder into the melted chocolate chips before dipping the vanilla wafer cookies in.

STEP SIX: Lay the cookies back onto the wire rack and place them back into the fridge for ten minutes to set.

How To Serve

You really don’t need anything to accompany these eclair cookies, as they are perfect on their own. 

If you do want an extra indulgent treat, you could pair them with vanilla ice cream or a hot fudge sauce
