Casserole Tips That Actually Help
Make It Ahead
Most of these are make-ahead casserole recipes that can be assembled up to 24 hours before baking. I cover the dish tightly and keep it in the fridge until I’m ready to cook. It’s best to factor in 30 minutes to let your dish come to room temperature before baking. If it’s going straight from cold to the oven, I add about 10 to 15 minutes to the bake time and check the center before pulling it out.
Prevent A Dry Casserole
I keep the dish covered with foil for the first two-thirds of baking to help everything stay tender, then uncover it for the final stretch so the top can brown. If it looks dry when you check it partway through, add a small splash of broth, cover it again, and let it finish baking. If I’m worried about my casserole drying out, I keep it covered the whole time and broil it for 30 seconds at the end to crisp up the top.
Freezing Casseroles
Most casseroles freeze well, either before or after baking. To preserve the texture, I always let them cool completely before wrapping and storing. The only ones I don’t freeze are Tater Tot or hash brown-topped casseroles, since they get mushy when they thaw. Those stay in the fridge and we make sure to eat them up within four days.
