Back in the day, my husband Ryan was a huge gamer.

He and his friends would have weekend gatherings where they played the latest and greatest games by the hour while consuming copious amounts of pizza and listening to their favorite rock bands.

More than once, I’ve chuckled as I’ve listened to him share the stories.

One of my favorites involves a childhood friend being duct taped to a ceiling — along with his laptop — where he continued to play games for several hours.

As an adult, and now a mama myself, I can only wonder what that boy’s parents thought! It does give me a good giggle to think of it though. 😉

These days, Ryan doesn’t have much time for gaming — he’s a financial consultant by day and is busy with our two active boys in his “free” time.

While Ryan was first setting up the laptop, he mentioned how good pizza sounded.

I chuckled and asked him if it was like being in high school again… setting up a new system, getting ready to game. He laughed and agreed… and then reminded me that stuffed crust pizza was always his favorite.

I know how to take a hint so it wasn’t long before I headed into the kitchen and got to work on this delicious, homemade yumminess!

It’s so easy to make and so filling. My boys love that they can help choose the toppings when we make pizza at home.

The smile on Ryan’s face when I served him and the boys pizza melted my heart. I loved watching him enjoy quality time with the boys and teach them about something he’s always loved.

I know there will be many great years of gaming ahead for my guys. And lots more pizza, too. 😉

Homemade Stuffed Crust Pizza

Stuffed Crust Pizza

I love this easy, delicious homemade version of a favorite!

Ingredients

For the dough:

  • 1 cup warm water
  • ½ teaspoon sugar
  • 1 package yeast
  • 2 ½ cups flour
  • 1 teaspoon salt
  • 2 tablespoons melted butter
  • ¼ teaspoon garlic powder

For the toppings:

  • Pizza sauce
  • pepperoni
  • 1 spicy sausage link cooked
  • 5 strips of cooked bacon chopped
  • ½ jalapeno sliced
  • 2 small peppers sliced
  • 1/3 cup ricotta cheese
  • 2 cups shredded mozzarella
  • 2 ½ tablespoons melted butter
  • ¼ teaspoon garlic powder
  • 8 whole milk mozzarella cheese sticks cut into 1 inch pieces

Instructions

  • In a small measuring cup, add warm water (approx. 80 degrees), sugar and yeast. Let sit until yeast starts to bubble and activate.
  • Pour into the bowl of a stand mixer fitted with the dough hook. Add 2 cups of flour, salt, butter and garlic powder.
  • Turn the mixer on and mix until dough starts to come together. Add remaining dough and mix until all the dough pulls away from the sides of the bowl.
  • Cover and let rise for 1 hour or until doubles in size.
  • Preheat oven with cooking stone inside to 450 degrees.
  • On a well-floured surface roll dough into a 16 inch circle. Transfer to a well-floured pizza paddle.
  • Place the pieces of cheese stick around the edge of the dough and pull the edges of the dough over the top of the cheese stick and press to seal. (If the dough is having trouble sticking, wet the dough with additional butter to let it stick).
  • Assemble your pizza by spreading sauce, cheese and desired toppings over the top.
  • Mix melted butter and garlic powder together and brush the edges with the butter.
  • Gently transfer the pizza from the paddle onto the hot stone. Bake for 10-14 minutes. Remove the pizza from the oven. Let cool slightly and slice in 8 pieces.

Notes

If you do not have a stone or a pizza paddle use a round pizza pan and assemble your pizza directly on the pan after you’ve rolled it out.
