Whatever the occasion, carrot bread always went down a treat with my family and a loaf never stuck around for long! Everyone tried to make their own carrot bread recipe but my Grandma’s was without a doubt the best one.

Her carrot bread recipe is delicious to eat and simple to make so whenever there was an excuse to make it, she did.

Making bread from scratch is one of those things that will forever be timeless. I remember my Grandma teaching me how to make this easy carrot bread when I was just a girl. This is a recipe that has been in my family for generations because it’s just so good.

I don’t know about you, but the smell of carrot and nutmeg  reminds me of getting together with families. This is one of my favorite things to bake at Easter, Thanksgiving and Christmas when we have the family come to visit. Even out of the holiday season, my family can’t get enough of this carrot bread recipe.

Baking healthier breads like this carrot bread recipe from scratch will quickly become your new favorite thing. I love how versatile this recipe is. It taste amazing as a loaf with butter generously spread on it and it also tastes great when you make it into muffins.

If you want to make this carrot bread recipe extra delicious and healthy, you could try adding banana, apple, raisins or nuts. We made carrot apple muffins recently and the combination was amazing.

You can also use this exact same carrot bread recipe to make some delicious  carrot muffins. Simply place the mixture into smaller muffin cases and bake in the oven for 20 – 30 minutes.

Carrot Bread Ingredients You Will Need

  • 1 cup of grated carrot
  • ½ cup of oil
  • 1 cup of sugar
  • 1 ½ cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • ½ teaspoon of salt
  • 2 eggs
  • 1 cup nut meat

How to Make Carrot Bread

To this day, I am still so surprised at how easy it is to make this carrot bread recipe. I get my boys in the kitchen to bake this bread with me and I barely have to lift a finger because they’re able to do most of it by themselves (under my careful supervision).

This is one of those slap-dash recipes where it’s as simple as chucking all the ingredients together and baking it.

First you will want to mix together the eggs, oil and sugar. These ingredients get mixed with the dry ingredients (flour, baking soda, baking powder, cinnamon, salt, nut meat and grated carrot).

You’ll then transfer the mixture to a greased loaf pan and bake in the oven at 350 degrees for 60 minutes.

How Long to Bake Carrot Bread

Carrot bread is classed as a quick bread. Most loaves of carrot bread will take 60 minutes to bake, give or take. Depending on the size of your tin, some might take a little longer or a little less time. Be sure to check that the middle is cooked before removing from the oven.

It might be tempting to take the loaf out of the oven before the hour is up as it will start to brown quite quickly, but resist that temptation. That’s just the carrot doing it’s thing.

Before you take the carrot bread out of the oven, stick a knife or skewer through the center and make sure it comes out clean. That way you can be sure the loaf is cooked.

Nothing spoils carrot bread more than an undercooked center.

Can You Freeze Carrot Bread?

Quick breads like this carrot bread recipe are perfect for freezing. To freeze your homemade carrot bread, simply wrap the baked loaf in some aluminum foil, freezer wrap or place in a ziplock freezer bag and put in your freezer. You can freeze the loaf whole or cut it into smaller portions to freeze. It is important that you allow the carrot bread to cool completely before freezing.

Make sure that you label the carrot bread with the date that you made it. This carrot bread recipe will keep well in the freezer for up to three months. When you want to use your carrot bread, it can be thawed completely at room temperature. You can heat smaller individual portions in the microwave or oven as directed:

To thaw single servings of carrot bread in the microwave, place the unwrapped slice on a microwave safe plate or paper towel. Microwave on high for 30 seconds, turn over and microwave for another 30 seconds.

To thaw your carrot bread slices in the oven, heat the oven to 350 degrees and bake for 10 – 15 minutes depending on the size of the carrot bread portion.

      I am not a fan of carrots so I wasn’t sure about this, but it was very good and couldn’t get enough/
