This delicious side dish centers around green cabbage, which crisps up beautifully in the air fryer, offering a mild, slightly sweet flavor, while a drizzle of extra virgin olive oil adds a fruity richness to the cabbage steaks.

To balance the dish, apple cider vinegar introduces a subtle tangy kick, while a blend of garlic powder, onion powder, kosher salt, cracked black pepper, and paprika creates an irresistible seasoning that enhances both the taste and texture of the cabbage.

If you’re ready to embark on this flavorful journey, here’s what you’ll need:

  • 1 head of medium green cabbage
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of kosher salt
  • ½ teaspoon of fresh cracked black pepper
  • ½ teaspoon of paprika
  • 2 teaspoons of fresh chopped parsley, garnish

Substitutions and Additions

GREEN CABBAGE: If you can’t find green cabbage, Napa cabbage can be a worthy substitute, lending a slightly different flavor and texture to the dish.

OLIVE OIL: Swap out the olive oil for melted butter or a flavorful oil of your choice to personalize the taste.

SPICES: Experiment with your spice cabinet by adding a pinch of cayenne or red pepper flakes for some heat or smoked paprika for a smoky twist.

How To Make This Air Fryer Cabbage Recipe

It’s surprisingly easy to make these air fryer cabbage steaks. We will walk you through the easy steps to cutting and seasoning the cabbage before cooking it to perfection.

OUR RECIPE DEVELOPER SAYS

Make sure to check your air fryer manual for cooking time guidelines for your specific model, as cooking times and temperatures vary depending on the type of air fryer you have.

STEP ONE: Remove any really loose leaves from the outside of the head of cabbage. Make a clean slice off of the root end. Then, turn that flat end onto your cutting board. This will give stability while cutting the steaks.

Now slice the cabbage in half. While the cabbage is still standing on the flat end, continue to slice outward from the middle into ¾ to 1-inch steaks.

PRO TIP:

When cutting the cabbage into steaks or wedges, try to make them as uniform in size as possible. This ensures even cooking.

STEP TWO: Add the olive oil and vinegar into a small bowl and stir.

STEP THREE: Add the garlic powder, onion powder, kosher salt, cracked black pepper, and smoked paprika to a small bowl. Stir to mix.

STEP FOUR: With your cabbage steaks now lying flat on a sheet pan or cutting board, use a pastry brush or a spoon to spread the olive oil mixture over both sides of the cabbage steaks. Turn the steaks over, gently holding the sides together as you turn.

STEP FIVE: Now sprinkle about 1½ teaspoons of the spice mixture on one side of the pieces of cabbage. Make sure to get it all along the edges.

You can use a spoon or use your fingers to sprinkle the seasoning onto the cabbage steak.

STEP SIX: Lightly spray the air fryer basket with olive oil spray or avocado cooking spray.

STEP SEVEN: Gently place the cabbage steak into the air fryer basket in a single layer with the seasoned side up. If your cabbage steaks are a bit wide, you may need to cook the cabbage steaks in batches.

Cook at 360°F for 12-15 minutes. Check them at 12 minutes to check for golden brown edges. Depending on how thick you cut your steaks, you can continue to cook in 2-minute increments, checking at the end of each cook time.

PRO TIP:

Add ¼ cup of water to the bottom of the air fryer basket (if you use a basket air fryer like Cosori). This water helps with clean up, keeps any burned bits from smoking, and adds a little steam to the cooking, too, which works great with cabbage.

STEP EIGHT: Remove cabbage steaks from the air fryer using a spatula and garnish with the chopped parsley.

STEP NINE: (Optional) You can brush a little bit more olive oil on the cabbage steaks after removing them from the air fryer.

STEP TEN: Don’t be afraid of the really dark edges. Those are crispy like chips and are totally yummy!

STEP ELEVEN: The air-fried cabbage steaks are quite “fragile,” so handle them with care.

Storage

If you have any leftovers of this cabbage recipe, we have a few guidelines for storing it to enjoy later.

MAKE AHEAD: You can prepare the olive oil mixture and seasonings in advance, making it even easier to whip up this dish when needed.

IN THE FRIDGE: Store any leftover cabbage steaks in an airtight container in the fridge for up to two days. Reheat them in the air fryer for a few minutes to restore their crispy texture.

IN THE FREEZER: While cabbage can be frozen, its texture may change after thawing. It’s best enjoyed fresh, but if you have extra, freeze it in an airtight container for up to three months. Reheat in the air fryer for the best results.

REHEATING: To reheat, simply pop the cabbage steaks back into the air fryer for a few minutes until they regain their crispiness. Alternatively, a microwave can be used for a quick warm-up.
