Substitutions And Additions
CHOCOLATE CHIPS: Add ½-1 cup of white chocolate chips to the cake mix for a sweet surprise in this easy recipe.
STRAWBERRY CAKE MIX: If you’re feeling adventurous or prefer a different flavor, you can experiment with different cake mix flavors.
Try using a vanilla or chocolate cake mix for a unique twist on these brownies.
Keep in mind that this will alter the overall flavor, but it can be a fun way to customize the recipe to your taste.
GOLDEN OREOS: While Golden Oreos are fantastic for the crumble, you can switch things up by using chocolate sandwich cookies or graham crackers.
The chocolate cookies will provide a chocolatey contrast to the strawberry flavor, while graham crackers will bring a subtle, honeyed note to the mix.
How To Make This Strawberry Shortcake Brownies Recipe
These brownies are easy to make since they start with a boxed cake mix. Whip up the frosting and crumble topping to finish them off before digging in.
STEP ONE: Preheat the oven to 350°F. Line an 8×8-inch glass baking dish with parchment paper, spray with non-stick cooking spray, and set aside.
OUR RECIPE DEVELOPER SAYS
You can also bake in a 9×13-inch baking dish. The brownies will be thinner, but there will still be enough frosting and cookie crumble to cover in thinner layers. The brownies will also bake in less time.
STEP TWO: Mix strawberry cake mix, ½ cup melted butter, eggs, and two tablespoons of strawberry gelatin in a medium bowl until well combined. The batter will be thick.
PRO TIP:
Adding some of the strawberry gelatin into the brownie batter gives them a punch of extra flavor and also helps to make them extra chewy/fudgy.
STEP THREE: Use a rubber spatula to spread the batter into the prepared baking dish. Bake for 25 minutes.
Check for doneness by inserting a toothpick into the center of the brownies. They are done when the toothpick comes out clean. Cool completely.
PRO TIP:
Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to keep a close eye on your brownies as the suggested baking time approaches.
STEP FOUR: With an electric mixer, beat together the cream cheese, butter, and vanilla until combined.
Add the powdered sugar and heavy cream and beat until smooth and fluffy.
PRO TIP:
Make sure your cream cheese is at room temperature so that you don’t end up with lumps in the cream cheese frosting.
STEP FIVE: Spread the cream cheese frosting over the cooled brownies.
STEP SIX: In the bowl of a food processor, pulse the golden Oreos until they are broken into pieces, making sure there are several larger chunks remaining.
STEP SEVEN: Sprinkle the remaining strawberry gelatin over the cookie crumbs and drizzle with melted butter. Pulse in the food processor a few more times until combined.
STEP EIGHT: Sprinkle the cookie crumbles over the strawberry brownies and press them down into the frosting.
STEP NINE: Cut brownies into squares and serve.
PRO TIP:
These brownies are thick and so sweet and delicious. We cut them into nine 2.5×2.5-inch pieces, but 16 smaller pieces would be great for serving with other treats.

Frequently Asked Questions
This strawberry brownie recipe will freeze well for up to three months stored in an airtight container.
We wouldn’t recommend adding fresh strawberries as the moisture may affect how the brownies bake, but freeze-dried strawberries would work fine.
These strawberry cake mix brownies are best made with strawberry cake mix, but if you can’t find that at the store, a vanilla cake mix would work as well. You could add a couple of drops of strawberry extract and pink food coloring to give them the strawberry flavor and color.

My daughter loves anything strawberry! I will definitely be making these, and might adda little bit of edible glitter, I get vegan products from https://www.thesugarart.com/ 🙂 Thanks for the recipe!!

I made these for Thanksgiving and they we’re a hit. Although my icing was a bit thin putting it in the icebox made it stiff again.
I would most definitely make these again.

I’m very excited to try this recipe. I just have a question about the parchment paper. Could I just grease and flour the baking dish so I can leave it in the baking dish and just serve/cut as needed from the baking dish?
Kim says
Just finished making these. They look and smell amazing. I can’t wait to try them. But, I need to know if they should be refrigerated or if they can stay out on the counter covered for a day or two until completely eaten? Thank you
Layne Kangas says
Hi, Kim – you can leave them on the counter in a container for three to four days. Enjoy!
Jackie says
Cream cheese frosting needs to be refrigerated always.
Andrea Lupo says
Can you double the recipe for a 9×13 pan so they will be the same thickness as a 8×8 pan?
Layne Kangas says
Hi, Andrea – yes, you can double in a 9×13, enjoy!
Katherine says
Wow, I didn’t expect to like this dessert as much as I did! It tastes so good, I’m actually a huge fan of those strawberry shortcake ice cream bars and this tastes exactly like it. I was shocked that the toppings taste identical and to know all it took was some golden Oreos, strawberry jello mix, and butter! I would recommend this recipe.
Sallee Hart says
Loved this!!! I added cool whip to the frosting and put the Jell-O in there instead of the cookies- still tasted good. Also tried it with Lemon cake & cookies!
