This pineapple cooler is refreshing, flavorful, and, best of all, easy to make. Pineapple and coconut milk are blended with rum and lime for a refreshingly sweet and tangy cocktail that will have you dreaming of the beach.

If you’re looking for a refreshing and unique drink to cool you down on a hot day, a pineapple cooler is definitely worth trying.

The sweetness of the pineapple blends perfectly with the tartness of limes, and the coconut milk adds plenty of creaminess to this grown-up drink.

You’ll need:

  • 1 (16-ounce) bag of frozen pineapple chunks
  • 1½ cups of coconut milk drink (dairy alternative – I used the SILK Original brand)
  • 3 ounces of white rum (I used the Captain Morgan brand)
  • 3 ounces of coconut rum liqueur (I used the Malibu Original brand)
  • ¼ cup of fresh lime juice
  • ¼ cup of light agave sweetener
  • Garnish: a small wedge of fresh pineapple and a small slice of fresh lime 

Substitutions And Additions

PINEAPPLE: Using frozen pineapple chunks for this pineapple cocktail recipe is a great way to have a piece of the tropics all year round.

If you can find fresh pineapple in season, you can peel and chunk a fresh pineapple instead. I suggest placing your fresh pineapple chunks in the freezer for an hour or two before using them to make this cocktail.

Alternatively, you can use the fresh pineapple chunks and 1 cup of ice to make this pineapple cooler.

SWEETENER: I like using light agave liquid sweetener in my cocktails because it blends easily into other liquids. If you do not want to use it, you can make a simple syrup to use instead.

You will bring equal parts water and granulated sugar (my standard is 1 cup of each) to a simmer just long enough for the sugar to dissolve. Stir and allow it to cool before using it in your drinks to sweeten them.

RUM: I prefer white rum (also known as clear rum) in this cocktail. However, if you prefer darker or spiced rum, that will work as well.

A quick spin in the blender will result in this creamy and refreshing drink that will keep you cool all summer long.

STEP ONE: In the pitcher of a blender, add the frozen pineapple chunks, coconut milk, white rum, coconut rum liqueur, lime juice, and agave.

STEP TWO: Blend on high for 30 seconds to 1 minute or until all the frozen pineapple chunks are completely blended smooth. 

PRO TIP:

If your blender has a ‘smoothie’ setting, you can use that.

STEP THREE: Garnish each glass with a fresh pineapple wedge and lime wedge.

PRO TIP:

This recipe for pineapple cooler makes four cocktails. If you do not serve all the cocktails immediately, then you may need to turn the blender back on for a few seconds to re-mix the cocktail before serving the remaining drinks.

IN THE FRIDGE: If you have any leftover coolers, place the blender pitcher in the fridge until you are ready to serve the rest. Give it a quick spin in the blender right before you serve it.

IN THE FREEZER: We don’t recommend freezing this drink. It is best made when you are ready to enjoy it.
